Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Draught, half pint. @Birra! 2020, A Coruña. 08/02/2020 [#3.269 Global - #93 Scotland - #3 Vault City] Murky orange colour with a small white head. Poor retention. Aroma is candy, bubblegum and tangy. Taste is tart, tangy and sweet sugary. Sof funk. Next one please!

Draught, half pint. @Birra! 2020, A Coruña. 08/02/2020 [#3.254 Global - #92 Scotland - #2 Vault City] Deep purple colour with a medium purple head. Good lacing. Aroma is full of berries and blackcurrant. Taste is also full of berries and blackcurrant leading to a medium sour finish. Funky and tart. Good! Next one please!

Tried at Brewdog Clerkenwell. Purple colour with a pinkish head. Aroma has cherry and hints of raspberry. Taste tart berry fruity. Smooth body.

Keg at BD Castlegate. It pours crazy cloudy deep reddish - purple with a small, foamy white head. The aroma is sweet, sticky, juicy, tangy, bright, raspberry crumble, strawberry Victoria sponge cake, almond biscotti, bakewell tart and some warming spice. The taste is sweet - sour, very juicy and jammy, plenty of red berry, all of them but mostly cherry and strawberry, vanilla, Victoria sponge, gummy bears, bakewell tart, spicy almost, cinnamon and only a vague hint of acidity with a sweet and jammy berry finish. Medium+ body and fine carbonation. Fun, but if I'm being picky it sits a bit heavy and could be more sour.

Keg at the hanging bat. Pours purplish, nose is huge blackcurrant, ribena, funk, taste is tart, juicy, funky.

Bottle shared in London - cheers to Dan. Pours murky orange with a small, creamy white head. Moderately sweet, somewhat juicy, lightly salty, lightly acidic. Light bodied with massaging carbonation. Refreshing finish. Solid.
