Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Keg at Monty's 070220. Pours murky glowing orange with a short-lived head. Aromas of irn bru and a light funkiness as promised. Taste is sweet and sour. Good, but a half was enough.

Draught @ Himmeriget, Copenhagen. Sour, heavy with blackcurrant jammy notes, hints of sweetness and dry notes in the finish. Pretty intense.

Keg at BD Soho, 07/02/20. Pinkish purple berry smoothie appearance with an off white cap. Nose is tangy berries, blackcurrant, sharp raspberry notes, damp straw, grains. Taste comprises light funk, damp cloth, berry pips, sharp strawberries, blackcurrant yoghurt, hay bale. Medium bodied, fine carbonation, semi drying close with a light puckering kiss. Nice berry refresher with restrained acidity.

7/2/2020. Tap at BrewDog, Birmingham. Made for us - red berry buckle. Pours dark red with a pink head. Aroma of sour berries, raspberry, cherry, strawberry, almond and a hint of cinnamon. Moderate sweetness to start but the almond brings more sweetness through later. Medium tartness. Moderate body, slight oily texture, soft carbonation. Very drinkable, lacked a bit of body but otherwise very nice.

Bottle shared with my bro. Picked up at Fierce. It pours deep cloudy purple with a rugged purple head. The aroma is fresh and bright, loads of dark berry, intense blackcurrant, bramble, blueberry, tangy purple chewits, jam, toasted almond and purple tunes. The taste is soft, smooth, crazy juicy, great depth of dark berry, jammy, blackcurrant, bramble, blueberry compote, toasted almond biscotti, light marzipan, define jammy bakewell tart vibe and Victoria sponge cake with a tangy and fruity finish. Medium body and fine, dense carbonation. Rich, fruity and tangy. Rather juicy and quaffable.

Bottke from Fierce Bar. Thanks to my bro. It pours cloudy luminous orange with a quickly dissipating white head. The aroma is sweet, sour, tangy, fruity, candy, bubblegum and massive Irn Bru bar character. The taste is tart, tangy, bitter - sweet, sugary, yet sour, fruity action, massive Irn Bru bar character, puckering, dull acidity, candy and kinda lactic in mouth feel. Finish is fruity Irn Bru. Medium body and fine, prickly carbonation. Fun stuff. Definitely hits that Irn Bru bar vibe spot on.
