Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Keg at Bow Bar. It pours crazy cloudy orange with a medium white head. The aroma is sweet - sour, tart, tangy, orange sherbet, um bungo and tropical vibes. The taste is dry, crisp, bitter - sweet, sour, sherbet loads of tropical fruits, um bungo, mango, peach, sour candy, bit green, grassy and some danky edge with a dry, sherbety finish.. Medium body and fine, foamy carbonation. Super fruity and sour. Fun stuff.

Keg at BD Lothian Road. It pours cloudy golden - orange with a small white head. The aroma is big juicy citrus character, tangy fruits, yuzu, clementine, sherbet, fruit jelly, some wet hay and sour candy. The taste is crisp, tart, tangy, crazy juicy, ludicrously fruity, yuzu, pithy, zesty, tangerine, sour candy, five alive fruit juice, lemon sherbet, fruit cordinal and San pellegrino soda with a dry, fruity finish. Medium body and fine, prickly carbonation. So much god damn fruit. Dangerously drinkable and hides the abv well. Tropical fun times for me.

Black beer, light brown head. Smells of malt and chocolate. Big hefty flavour of toasty malt, chocolate, a little dried fruit and caramel and a perfectly balanced whisky hit. Just enough for it to be distinct but not so much for it to be a boozy mess. And a bit of a toasty aftertaste too with the scotch. Lovely stuff.

On keg at Potter Row. Appearance - murky yellow brown. Decent head. Nose - lemon and sour. Something herbaceous, probably the lemongrass. Taste - really tart bitter, lemon and herbs. Bittersalad and wasabe thing too. Palate - close to medium bodied, extremely tart through middle and finish. Overall - challenging.
