Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Beaverfest. Keg. Very hazy yellowish gold beer, small pale cream colour head. Light malts, light creamy sweetness. Nice fresh orange and grapefruit, tart but never acid. Light crisp minerally finish. Nicely citric.

Keg at the hanging bat. Pours hazy yellow, nose is pineapple, huge Orange, funk, taste is tart, juicy fruit, light funky.

Bottle from Bow Bar. It pours crazy cloudy orange with a bubbly white head. The aroma is fresh, zingy, sherbet, refreshers, tangerine vibes, sour candy and a but of funk. The taste is crisp, dry, tart, good mouth - pucker, sherbet, grapefruit, tangerine, tropic vibes, sour candy, lactic aspect, kick of acidity and refresher with dry, tart finish. Medium body and moderate carbonation. Bright, sour and fruity. Fun stuff.

A haze orange golden coloured pour with a a loose sticky white head. Aroma is honey earthy. Light lemon,. Flavour is composed perfume lemon, zippy. Pear, pineapple. Paldts is semi swert, tart, highish carbonation.. Paldts is tart and mild pucker. Ok.

Keg at Beaverex '18, day one, 07/09/18. Murky pineapple juice yellow with a decent off white covering. Nose is tarte citric pissoi, vinegar notes, damp straw, funk. Taste comprises green berry funk, lemon rind, acidic bite, sharp citric flesh, hay bale. Medium bodied, fine carbonation, semi drying close with light background hops and a puckering bite. Decent.

Bottle at cgarvieuk's. Pours unclear yellow. Aroma is Brett stables, elderflower, leather. Body is medium, quite sour and tart, some leather and lemon peel and elderflower indeed. Fizzy carbonation, lots of candy and yoghurt. Not greatly balanced, but quite good.
