We have always been driven to craft the best beer we can, and (in our opinion) the true challenge, consistency. Constant innovation is exciting and engaging, but consistent core beers that you can always depend on, is a challenge that equally drives us.
Our approach to beer development is different than most. We outline the desired finished product, it’s appearance, aroma, mouthfeel and then reverse engineer the ingredients and processes to get our desired final product. Knowing and understanding not just individual ingredients characteristics, but how they interact with each other make this possible.

Draft pour pint at the safe. I’m not the most traveled person ever, but I’m pretty sure Seattle baseball has the best beer. Starts with these solid local favorites. Pours a bright golden color with a thin foam head. Sweet hop aroma and flavor. Nice lingering citrus. Good hop character. Good beer. $10 good? Ehh.

Dark brown color. Light brown head. The nose is fairly malty with lots of dark fruit and chocolate notes. The mouth is medium bodied with dark fruit and burnt brown sugar with modest hoppiness. Not a ton of roasted character or hoppiness. Almost reminds of a light Black Barley Wine. Pretty interesting and the more I drank it, the more I grooved on it.

Schooner at local bar. Amber copper color. Slightly sweet, good amount of tea from the malt, mish mash of slightly sweet and citrus hops. Fine beer, decent stuff, nothing to write home about but I can drink it again.

Hazy, light bronze. Pretty assertive, floral aroma, rich taste, def some alcohol, and a whole ton of sweet, hoppy, fairly smooth pale malts. Good stuff.

Dark brown with a reddish hint. Light molassesy aroma with a hint of nuttiness. Sweet, touch of brown sugar, bit of foreign stout fruitiness, and just enough bitterness.

Light bronze, touch of haze. Thin head. Light rambutan aromas and a subtle toasty crystal chewiness. Quite sweet, smooth but very caramel, and a dash of toffee.

Slightly hazy amber, thin head. Light caramel and biscuit aroma with a spicy, chewy hop palate, fairly piney, rich, lingering bitterness.

Light amber and with a thin head. Rich sweet tropical fruits, and a sweet fruity, honeyed taste with just a slight bit of malt toastiness. Pretty good balance.

Light amber-brown. Floral, citrusy, nose. Richer crystal, crackery, toasted malt, with mango and passionfruit hop, light pear, so a fair bit of sweetness to balance out the abundant bitterness.

Medium chestnut, thin head. Sweeter, slightly toffeeish nose. Lightly toasted, moderate bitterness, some dark sugars. Finish is mostly dry.
