We have always been driven to craft the best beer we can, and (in our opinion) the true challenge, consistency. Constant innovation is exciting and engaging, but consistent core beers that you can always depend on, is a challenge that equally drives us.
Our approach to beer development is different than most. We outline the desired finished product, it’s appearance, aroma, mouthfeel and then reverse engineer the ingredients and processes to get our desired final product. Knowing and understanding not just individual ingredients characteristics, but how they interact with each other make this possible.

Golden with a white head. Malty, light dough, toasted malt, and light earth notes. Medium bodied. Very British in style. Good if in the mood for that style.

Draft. Amber beer with a cream head. Light floral and light grapefruit aroma. Light malt and light grapefruit flavor. Medium bodied. Light malt and light grapefruit linger with light floral notes.

12 oz. bottle, pours a hazy yellow with a small white head. Aroma is quite perfumey, with subdued salt and citrus. Flavour is perfumey and citrusy upfront, with subdued salt. Rather lame for a gose. Not much lacto or salt, and too much perfume. Meh.

A well made, nicely balanced beer. Because of the balance, the hopheads rate it far lower than it should be, but I pay no attention to them anyhow.

On tap at McKay's Taphouse, pours a pretty clear copper amber with a small beige head. Aroma brings out bready malt, a little toasted caramel and some tart berry fruitiness. Flavour is robust for the style, with bready malt, toasted caramel and red berries. Bready and caramely with a slight vegetal quality on the finish. Decent.

16oz growler from Chuck’s CD. Very black beer, big head pour from growler. I had a Halls before the beer due to this cough from fatherhood. What is it about having a baby and getting a cough? Do Halls desensitize my taste buds? Aroma is toasty and oatmealy with cocoa and light roast and acidity. Mouthfeel is lighter but not light. Flavor is more mineral wit the roast and roast coming forward, also drags some of the roast acidity. Just a hint of unsugary sweet black malts. Low hop, dry black malt aftertaste. Maybe it’s the fatherhood cough but I’m digging this sout that isn’t particularly special.

Can shared by Mick. 7 Seas Life Jacket Session IPA 4.7% Clearish gold with bright citrusy hops and crackery light malts. Quite pithy citrus hops, quite bitter but fun.

Draft pour at the Collective Hop Mob. Cloudy orange pour with a thin fizz head. Very soft hop aroma. Flavor is soft fruit, grainy, and a bitter hop finish. Pretty good, but plain to me overall.
