750mL bottle (bottled 09/05/2023, BB 09/09/2023), pours a clear blonde with a humungous white head. Aroma is full of rustic farmhouse yeast, some spiciness, and crisp Belgian yeast. Flavour is spicy and rustic, with extremely aggressive carbonation. Seems more like a saison, with a pleasant rustic spiciness. Not the most complex but pleasantly put together. Nice stuff.

Corked bottle at Ryan's
Hazy blond colour. The aroma is funky, some fruit, feet. The acidity is sharp, the mouthfeel is slightly oily; some funk, some fruit (prickly pear, hint of strawberry), some alcohol.
It's ok, I don't taste the rar.

Pale blond colour, hazy. Acidic, mild funk, a bit lemony, dry, ending with a hint of spice.
Pleasant.

(750ml bottle @ Sardines, Quebec City, Aug 12/23) Pours lightly hazy pale gold with a fairly small white head and little lace. Relatively dry overall, some pomelo, unripe clementine, soft green apple, lightly funky (hay) and dusty yeast character, vinous naturally, very soft cereal base, light lactic acidity, dry into the finish with the grape pomace becoming more prominent, unripe citrus and a little funk to go with the light astringency, pretty mineral too. Light body, very filling effervescent carbonation. Very drinkable but still reasonably complex wild.

Poured from 750mL bottle (bottled 15-02-23; bb 15-02-24). Hazy yellow gold with white head. Rustic saison yeast, mild funk in the background, good balance, quite nice. On par with Philosoph(y)ie #3.

Taste: along the same lines, funky, apples, pears. fermented out honey and grapes. Overall: interesting, but not sure about why there is hype around it.

light golden color. Amazing botanical, herbs, nose with pears, peaches and citrus notes with light oak character. Medium body, slightly boozy, the depth is unreal. Nice oak, herb and botanical finish. Amazing

Bouteille 75cl, de et partagée avec Kevin au Thronefest Kuurne. Aucune idée sur la différence entre la version 'Espinay' et 'Saison Espinay' - sauf peut-être un changement d'étiquette? Notre version était juste 'Espinay'.
BB 29/03/2023, bottled 29/03/2022.
Dorée/pâle, col blanc.
Arôme est frais, malté pils avec un très bon fini en fût de chêne (vierge?). Nez fruité vert - groseille verte - à maquereau, citrique avec léger élément floral frais
Palais sur une note sèche et légèrement funk faisant de cette bière une classique saison 'sour'. Le support de barrique de chêne apporte un léger boisé et accentue peut-être un peu le côté funk. Fruité sur le citrique et un fruité jaune - voire vert rappelant la groseille. C'est frais, délicat et complexe, idéal en extérieur avec le soleil.

Assez classique, elle pourrait passer pour un peu monodimensionnelle mais le tout fonctionne à merveille.
