Description
Chimay is an authentic Trappist beer: this means that it is brewed within the walls of a Trappist monastery, under the control and responsibility of the community of monks, who are involved through the process of making and marketing the beer. Most of the income generated by this activity is devoted to the needs of the community and social works.

The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

KKKYGG. Dark red brown color with a beige head. Aroma and flavor is yeast, fruit, roasted malt, oak, caramel, dried fruit, oak.

375 ml corked & caged bottle, from Vinmonopolet, Nettbutikken. ABV is 10.5%. Dark brown colour, nearly black. Moderate off-white to beige head. Vinous aroma, notes of oak, rum, malts, caramel and brown sugar. Warming mouthfeel. Rich flavour of malts, oak, rum, vanilla and brown sugar, low bitterness

Bottle. Spicy Belgian yeast aroma with notes of floral hops, dried fruit, banana, clove and coriander. Pours cloudy golden colored with a large white head that has excellent retention and good lacing. Starts with dried fruit, banana and clove flavors. Finishes smooth and dry with floral hops, coriander and spicy Belgian yeast flavors as well as some warming booze at the very end. Excellent.

Draught at Monk's: pours gold with white head. Aroma is yeasty, fruity melange. Quite sweet. Light touch of bitterness. Lingering and very pleasant aftertaste.

Powerhouse off white head on an unfiltered amber body. Softy citrus hop and spice nose. Citrus hops, banana esters, cloves, cereal and candied fruit produce a crisp and fresh taste profile. The hops are a nice addition to the typical Chimay taste array.

A Blend of caramel, malt and dark fruit on the nose. This is a smooth and rich Strong Belgian Ale, featuring caramel, a hint of banana, figs, and malt in the taste profile. The balance reflects the skill of the brewers and the medium body and fine effervescence add to the quality and blending of this beer.
