Pretty cloudy dark brown to black beer, small creamy beige head, unstable, bit adhesive. Aroma: very lemony at first, sourish impression, lactobacillus, good roast, sourish impression, coffee and chocolate notes, fruity, grapefruit. MF: ok carbon, medium body. Taste: sourish start, pretty lemony, good roast, bitter, dry and acidic, some grapefruit, very bitter, lots of lemon juice. Aftertaste: acidic, lot and lots of citrus, gentle roast, grapefruit, citrus notes, dry, more citrus, nice one!

Clear blond beer, small irregular creamy white head, a little stable, a bit adhesive. Aroma: very fruity, lots of tropical fruits, juicy, sweet impression, peaches, some mango, tangerines, nice! MF: ok carbon, medium body. Taste: a bit sweet at first, hoppy nice bitterness, fruity touch, sweet malts, grains, hay. Aftertaste: a bit resinous, wry bitterness, little medicinal, fruity touch, dry finish with some grassy notes, good but not great.

New DIPA variation by Totem, big thanks to the brewer for the can! Hopped with good old Columbus but also Talus, a new Yakima hop variety derived from Sabro, in itself still a 'hip hop', if you see what I mean. Moussy, medium sized, audibly fizzing, egg-white, gradually opening but generally stable head over a hazy apricot blonde beer with pale orangey hue. Strong bouquet of fresh lime peel, pomelo, lemongrass, pink grapefruit, guava, green mango, hint of 'diesel', lemon cake, sunflower oil, vanilla sugar, triple sec, sugared lemon juice, honey, crushed pink peppercorns, dried lemonbalm. Crisp, colourful onset, lively carbonated with sweet and softly sourish notes of guava, mango, pomelo and lime, full but smooth, oily mouthfeel; bready malt core, fluffy and doughy, deeply soaked in a 'sunny', exuberant, refreshing hoppiness with lots of tropical associations (the mango and guava again) as well as a slight and brief hint at diesel-like dankness, but primarily offering an exotic citrus effect, uplifting the other flavours to a grand finale of colourful brightness - paired with a somewhat peppery hoppy bitterishness and more peppery, triple sec-like alcohol, which stretches out long into the finish, even interfering with the hops a bit. A very light, late and subtle but unmistakable hop burn is also discernible, but easily forgiven seen its short duration and relative insignifance in relation to the overall flavour. Powerful, boastful and ambitious NEDIPA, showcasing the possibilities of this new Talus variety (most easily associated with exotic citrusiness) in the best possible way. Utterly solid, and potentially even more expressive than most earlier Totem NEIPAs and NEDIPAs.

Clear blond to beige beer, big creamy bit irregular off-white head, little stable, bit adhesive, leaving some lacing in the glass. Aroma: lots of banana, bit malty, herbal touch, sweet, bread crust, rural impression. MF: ok carbon, medium body. Taste: nice stuff, slightly acidic first, then lots of bread notes, malty, some banana, herbal bitterness, bit peppery, little fruity. Aftertaste: good bitter finish, some fruity notes, apricot and banana peel, herbal, a little grassy, metallic, bread yeast.

Newish pastry stout by inexhaustible Totem, intended to evoke a marshmallow effect this time. Can at the Nieuwjaarsreceptie of the Ghent beer club. Medium sized, moussy, yellowish-beige, slowly opening head, black robe with thin burgundy edges. Aroma of chocolate sauce immediately followed by indeed marshmallow – or, much more accurately, Flemish ‘spekken’ or ‘nonnebillen’ (which is essentially the same thing), of the pink and white coloured versions I vividly remember from childhood, next to aspects of toffee, almond, white chocolate, walnut liqueur, pecan nuts and a very subtle background hint of beef stock. Very sweet onset, again that very vague beef stock umami note but fading very quickly in favour of candied date, pear syrup and, of course, marshmallow, again reminiscent of those pink-and-white ‘spekken’ my grandmother gave me when I was a child – an effect that never relents and dominates the whole beer till the last drop. Meanwhile, a soft carbonation effect adds some liveliness, in a syrupy, slick but very full, viscous environment. Layers of toffee- and milk chocolate-, eventually lightly cappuccino-like maltiness ensue, some peppery hops are tucked away deep into the finish, but the ‘spekken’ effect, as said, prevails throughout, even when a heating bourbon-like booziness sets in (a bit much so for me personally, even). It takes an accomplished brewery like Totem to come up with an idea like this and execute it to perfection, delivering a ton of marshmallow without any flaws or distractions from other flavours – there are very, very few breweries like that in Belgium and even if this may not be my preferred kind of beer, there is no denying that it is very well executed and therefore deserving of a high score.

33cl can. A very dark reddish brown beer with a big tan head. Aroma of sweet and strong dark malt, chocolate, vanilla, some coconut. Taste of sweet chocolate, vanilla, coconut, brownies.

Pours slightly hazed blonde. Medium white head. Stable and creamy . Scent is green fruitjuice, harsh citrus, tropical notes. Certainly specific ! Taste is full, very pronounced hops. Fatty fruit. Tad grassy, coconut tones , green fruits. Milder citrus and tropical notes. Not my favorite.

Pours black, small tanned head. Scent is fairly full. beautifull bourbon. Taste is full, roasty, beautifull bourbon once again. Very balanced. not pastry at all. Not overly thick either. But oh, so beautifully balanced and refined. lovely !

Imperial stout by Totem aged on Elijah Craig bourbon barrels, from a new series of barrel aged Totems. Thanks to Klaas and Liesbeth for sharing! Pale beige, thin, open ‘ring’ for a head, black robe with thin burgundy edges. Intense and beguiling bouquet of hot chocolate and chocolate liqueur, vanilla, the old-fashioned cherry ‘pralines’ my grandmother used to love, Belgian chocolates in general, obviously bourbon, nougat, tawny port, hints of pear drops, wet cinnamon, toffee, latté macchiato, noble oak furniture. Dense, focused onset, sweet and concentrated (Belgian chocolates effect again) with cherry-like sourish edge but thinly so, soft carbonation, very full and vinous body, though noticeably a bit thinned by alcohol. Intensely chocolatey core, hot chocolate sauce, with side effects of nougat, coffee cream and candied cherry; vanilla comes up strong, both from added vanillin and from the bourbon as well as from the oak wood. Woody tannins and bourbon-like booziness in the end, more than enough of both, but that whole ‘Belgian chocolates’ feel remains dominant, propelled forward by the vanilla. A liquid ‘praline’, flirting with pastry stout territory, but in a most refined, noble and utterly delicious way. What a gem.
