Description
Based in Perthshire, Scotland. We try to make light, modern mead with flavours inspired by archaeological finds in Northern Europe. The Rookery looks to evidence in the historical and archæological record for source material, then back-engineers these ancient drinks to create modern and exciting products.

At the Rookery, the fermentable in all our recipes is honey and we never use sugars or syrups. All the flavourings are high-quality ingredients and never artificial flavourings. Most of our meads use hand-foraged ingredients, concentrating on Scottish native species such as meadwort, heather, silver birch sap, crab-apples and a range of hedgerow berries.

Sample thanks to Danlo: Poured a clear golden with a bubble head. Aroma is floral, honey, boozy. Taste is boozy, honey, super floral, some tartness near finish, but very alcohol.

24/2/2022. Bottle sample courtesy of danlo, cheers Ed! Tayside rating #10. Pours clear pale gold with no head. Aroma is floral, honey, waxy, boozy, vegetal, polish. Medium plus sweetness, moderate bitterness, slight tart edge. Medium body, oily sticky texture, low carbonation. Bittersweet, warming alcohol, and just ever so slightly harsh finish. Enjoyed it, but not as much as other meads I've had recently.

Sample thanks to danlo. Cheers mate. Clear pale yellow appearance. Aroma is definitely strong, lots of floral honey with some solvent hints, cat piss and perhaps a fleeting cheese glimpse. Taste is fairly light bodied, expected a much slicker, richer, sweeter palate but its surprisingly easy-drinking, though a strong warmth lingers at the back of the palate. Lovely delicate floral mead character. Very decent.

700ml bottle from the Rookery. Pale golden colour, afew short-lived bubbles on top and aroma of honey, boozy. Taste is sweet, honey, floral & fruity hints, with boozy notes. Oily mouthfeel, medium bodied, low carbonation, boozy finish with residual sweetness. Nicely sippable.

50ml bottle from the Rookery. Pale golden colour, some short-lived bubbles on top and aroma of elderflower, honey. Taste is sweet, honey, elderflower, sugary. Syrupy mouthfeel, full to medium bodied, low carbonation, drying elderflower finish with lingering sweetness and boozy notes. Quite sippable.

50ml bottle from the Rookery. Golden colour, afew bubbles on top that dissipate away and aroma of pear, honey, boozy. Taste is sweet, honey, pear, woody, some core, with vanilla hints, and boozy notes. Oily mouthfeel, full bodied, low carbonation, drying warming finish with residual sweetness. Nicely sippable.

Glass at the 2020 Leicester Beer Festival. Golden and clear. Grassy aroma with honey, booze and berry notes. Complex taste with sweet herbal flavours rising above the honey. Light body, no carbonation. While not one of my favourite meads from The Rookery, this certainly holds its own.

Miniature bottle bought at GBBF 2019. Boozy pungent aroma. Bitter with a sweet edge. Pale gold. No head. Unlike the aroma there's little bitterness in the taste. Sweet honey. Warming. Veg/roots. Medium bodied. Slick. Flat. Slightly astringent finish. Enjoyable sipper.

Bag in a box at GBBF 2019. Boozy honey and floral aroma. Pale gold. No head. Medium sweet with some bitternes holding it back. Medium bodied. Slick. Flat. Warming finish. Lovely stuff.
