330mL bottle, pours a deep dark amber with a large beige head. Aroma reveals plenty of estery saison yeast, some old oaky earthiness, and bready malt. Flavour is fairly dry, with a minimally estery saison yeast character, gentle old oak, plenty of earthiness (somewhat murky/muddled), and a big bready malt base. Finishes dry, earthy, and oaky, with a very thick palate. Carbonation is slightly above average, fitting for the style. Not exceptionally complex, but it's competently brewed. Nice one.

Was not expecting to find Thiriez in Wisconsin. This is badass. Very dry and hoppy. This version is 5.5%. $11 but it ended up being almost free. Nice place!

5oz taster shared with Tom. Appearance: almost clear blonde with a white head, Aroma: typical Belgian saison notes, crispy. Taste: along the same lines, quite peppery, grassy and flowery. Overall: good for the style fans, but I am not the one, unfortunately.

On tap at Garden Path - Bellingham, pours a fairly clear golden with a small white head. Aroma brings out a nice wild yeast character, rustic saison yeast, and some doughy notes. Flavour is bone dry, with high bitterness, some black pepper and rustic saison yeast. Very dry, almost cardboardy, very bitter finish. Not so dynamic in yeast expression, but it's competently made. Decent.
