Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Frothy brown head. Deep brown/black body. Aroma of flowers, hops and only a few malts - rather unusual for a stout. Lightlt bitter start-off with little indications that would point to a stout, rather a blond beer. Moderately bitter finish with a stickiness and malts that can be attributed to a stout. Lightly bodied, especially for a stout. Highly carbonated.

Pours black with a huge light tan head. Aroma has notes of roasted malt, chocolate and coffee.Body is medium sweet and light bitter with a long roasted chocolate, coffee finish. Body is medium, texture is oily, carbonation is soft.

Bottle. A gusher, producing a big, dark beige head over a black body. The aroma is rather burnt, not ashtray-ish, more like bonfire, with some roasted malts and coffee. Some dark chocolate notes too. Very effervescent, medium bodied and dry. Roasted flavor with bonfire and some tar hints. Roasted and burnt finish. Overall, a nice beer indeed, actually, most beers from this brewery are fine. 120623

Bottle, 5%. very dark brown with floaties with medium beige head. Aroma is roasted malts, chocolate and coffee. Flavour is roasted malts, chocolate, coffee, high carbonation, medium sweet and a little bitter.

Bottle @ fonefan tasting. Huge head with excellent duration. Color is black with floaties. Aroma and taste are roast malt, milk chocolate, caramel and hops. High carbonation.

Pours slightly hazy deep golden with a huge off-white head. Aroma has notes of malt and grapes. Taste is medium sweet and light bitter with a long fruity finish. Body is medium, texture is oily, carbonation is soft.

Bottle. A big, dense, off-white head produces lacings as the dark golden beer escapes the glass. Fruity, piney nose with some peaches and a pleasant maltyness in the back. A bit sweet on the palate maybe, but with enough bitterness to prevent it from being cloying in any way. Fruity, peachy and lightly biscuity. Medium to full body, maybe a bit too carbonated. Bottle, 6%. hazy amber with big off-white head. Aroma is malt, fruit, hops, caramel and a little grapefruit. Flavour is malt, fruit, caramel, hops, grapefruit, little sweet, little earthy, little pine and medium bitter.

Bottle @ fonefan tasting. Huge head with good duration. Color is amber. Aroma and taste are rich hops, flowers, peach, citrus, pine, caramel and malt. Great stuff.
