Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Bottle from La Cave à Bulles. It pours cloudy amber, with a massive white head. The nose is fresh coconut, slight herbal. The taste is pine, dry straw, hint of coconut, hay, lightly herbal and metallic, with a decently bitter finish. Light-medium body, fine carbonation and foamy mouth-feel. Light, yet full flavoured. Easy drinking.

Dark brown color, with a huge brownish head, too much. Aroma of chocolate, light roasted malt, very light yeast, and a metallic touch. Dry mouthfeel; dark chocolate flavor, with more liquorice than smoke; a bit salty; ordinary bitterness. A Stout, maybe.

Hazy dark amber color, with a small sized creamy head. Mild aroma of malt, caramel and alcohol. Good body, and round mouthfeel; malt flavor, some caramel, light chocolate, but also a vegetables touch probably due to the high octane fermentation; the alcohol is a bit too much present; there are traces of liquorice; correct bitterness.
A mix of English Barley Wine and Strong Belgian Ale, with imprecision.
I feel I’ve been generous, considering that I couldn’t finish the bottle.

Slow gusher; cloudy amber color, with a medium sized head, frothy. It has a very nice fruity aroma, pungent, of passion fruit. This hop is more penetrating than the ones used for the regular IPA, and the beer is less yeasty and astringent, therefore the result is more interesting; the mouthfeel is quite dry, the bitterness strong, the malt is not too strong, the final is a bit harsh and astringent.

Hazy copper-amber color. Although it has quite good caramel and hop character (aroma and flavor), it haso has some vegetables in it, not a good sign; it also has a too strong yeast character.

The hop used doesn’t seem to be a killer; rough beer.

Bottle shared at Craft by Scopey? Cheers Paul. Very hazy amber beer, little white head. Light palate, soft and airy. Good Sorachi - lemon cream and a little herb. Finishes smooth and dry. Nice beer - the Sorachi stops it from being insipid but it is very light!
