Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Hazy golden colour, one inch of creamy white head which lasts for several minutes; aromacof orange, orange peel oils, grape, slight pear and maybe peach, as well as some biscuits; taste is basically the same with less intensive fruitiness (and moderate hopy bitterness); good one

Hazy brown colour, practically no head at all; aroma of raisins and dried cherry soaked into cognac, some dark chocolate, caramel, soy sauce and herbal notes, taste is basically the sam with some minimal woody-red wine, as well as acetone-like and sourish notes (as if a slight amount of gueuze had been mixed to it); great one!

0.33 l bottle from Bìeres des Halles, Lille. Gusher. Black, diminishing brown head. Slightly weird burnt (plastic)/fruit combo, turns out nicely to black currant. Base style present underneath with roasty and burnt malty components. Has this chocolate fruit cake feeling but with an odd harsh note. Nice acidity in flavour balanced with roasty, still harsh. Warming. Delicate. Fruity finish. Some bitterness, herbal touch. Medium body, moderate carbonation. Interesting and bold.

Keg at 73 Enid Street, 29/05/19. Almost clear golden with a well presented off white covering. Nose is funky, wet straw, citric peel, light pissy barrel tones. Taste comprises damp oak, green berry funk, dusty vanilla essence, sharp citric notes, barnyard esters. Medium bodied, fine carbonation, semi drying close with a balanced rising acidic bite. Decent sour.
