Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Draught @ Port Street Beer House, 39-41 Port Street, Manchester, Greater Manchester, England M1 2EQ. [ As Mont Salève Export Stout ].Clear dark brown black colour with a average, frothy, good lacing, mostly lasting, beige head. Aroma is moderate to heavy malty, roasted, chocolate, dark fruit, raisin, plum, light soy sauce. Flavor is moderate to heavy sweet and moderate bitter with a long duration, roasted, dark fruit, raisin, chocolate, wood. Body is medium, texture is oily, carbonation is soft. [20170121] 7-3-8-3-15

Nice creamy mediumlasting head. Aroma is mild roasted, dark malts, grass, sour coffee, berry skin, hints of dry raspberries. Taste is kind of sour-ish dry, grass, dark malts, berry skin, burnt caramel, berry skin, paper, hints of dry raspberries. Medium bitterness, very watery mouthfeel. Boring.

33cl bottle ("Mont Salève Bitter", 4,1%) (BB 14/1-18). Pours hazy golden with a white head. Fruity and hoppy aroma with herbal notes, light citrus and hints of herbs and malt. Moderate sweet and turns out fairly malty in the end too. Body is on the lighter side. Medium flavour intensity and a light, but rather pleasant bitterness. Feels slightly messy, but quite drinkable.

Bottle at home from La Cave a Bulles, 21st September 18. Pours a black beer, white bubbly head. Aroma is cocoa and bitter hop, citrus. Taste is aromatic, bitter citrus and cocoa, delicious hop forward BIPA, very impressive.

Bottle bought at Tilquin English Beer Festival 2018. Pours hazy dark brown, blackish, with a quickly thinning, tan head. 'Dark' aroma of earth, coffee ground, fondant chips, dried (black) tea leaves, (warm) chestnut, beetroot, yeast, raspberry. It tastes light to medium fruity sour, and light roasted bitter, balancing hints of raspberry, coffee & fondant; a touch of malty nuttiness in the back. Bit tart, bit roasted finish, some earth hops with retronasal earth & (coffee) roast. Light body, slick texture, fizzy carbonation. A succesful hybrid, this coffee-infused Stout/Berliner Weisse, well balanced.
