Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Draft sample @ Tilquin English Beerfest 2018. Not a sour. Dorée-orange, col fin blanc. arôme est léger sur les grains avec un rétro fruité assez plaisant entre mandarine et orange, retrouve aussi un effet belge au niveau de la levure et qcq esters. Touche verte des houblons perce en rétro-nasal; Palais sur effervescence haute avec un caractère belge marqué, petite note pomme esters, fruité orangé, agrumes, levure moyenne encore dans un style belge plus de bière d'abbaye. Note aussi un léger effet de champagne sur l'effervescence.

Draft sample @ Tilquin English Beerfest 2018. Brune, col léger blanc-cassé. Arôme est de suite sur de belles effluves de café, le tout avec un léger rétro-nasal citrique de la Berliner qui apporte une bonne balance entre malt- et café. Palais est léger, le café est bien là avec un fini citrique - citronné léger et finement lactique mais sans devenir trop agressif. Léger, frais, effet torréfié perdure et se fond bien dans cette Berliner.

Draft sample @ Tilquin English Beerfest 2018. Rosé, col fin rosé-blanc. Arôme offre un bouquet fruité modéré mettant bien en avant le côté raisin, retrouve un rétro moyen de citrique de Berliner qui ne devient pas trop agressif. Pointe farineuse se dégage en retrait. Palais est farineux, raisin bien placé avec un apport tannique plaisant, le tout donnant un caractère fruité assez dominant au niveau de ce raisin - tirant aussi sur un rappel de prune et fruits noirs. Le profil de Berliner est plaisant sans tomber dans l'outre acidité américaine. Je pense que l'usage du raisin adouci un peu le fini.

Cloudy jet black with a lasting, small, frothy, dark beige head; little lacing. Strong aroma of raspberries, roasted malt, chocolate powder, raisin, some black licorice. It tastes light to medium fruity sour, notes of raspberry & licorice, and light roasted bitter, some fondant & milk chocolate, even a tiny hint of salt. Toasty, fruity finish, a bit tart (raspberry seeds). Medium to full body, creamy texture, soft carbonation. Super hybrid!

Taste: very sourish start, raspberries, roasted, little bitter. Aftertaste: more roasted notes, some coffee, pretty acidic. I like my impy stouts a bit sweeter... Would've given it more of a chocolate/raspberry desert impression I think. Is now lacking both chocolate notes and sweetness. Raspberry is there though!
