Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Draft @ the brewery. Pours black, good pale tan head. Aroma has some pelasant roast, light chocolate and shades of Sorachi. Taste has a similar flavour profile, not too light on the palate, with a very good integration of roast and Sorachi coconut, some emerging chocolate hints. Excellent modern example of the style.

75cl bottle from the brewery. Pours a misty golden yellow. Aroma has some lactic acidity, soft apricot fruit. Taste presents a very well-balanced berliner character, lightly sour with a nice apricot presence and light tangy close. Very good berliner.

Clear blond to orange beer, small creamy off-white head, little stable, adhesive, leaving a nice lacing in the glass. Aroma: pretty fruity, malty, some passion fruit, citrus, grapefruit touch. MF: ok carbon, medium body. Taste: very malty, bitter, bit oxidized, didn't notice the BB-date upon purchase, grains, hay. Aftertaste: very bitter, bit oxidized, mainly malt notes. Meh. Even for a 6 month old ipa, it's still pretty weak.

Clear dark brown beer, small creamy to aery irregular beige head, unstable, falls down quickly. Aroma: very roasted, sweet impressions, lots of chocolate. MF: ok carbon, medium to full body. Taste: pretty bitter, roasted, chocolate, some coffee, little sourish. Aftertaste: very roasted, bit sweet, hoppy touch, some coffee. Very nice one!

Bottle shared at Chriso's Pre-GBBF Shindig. 06/08/2017. Many thanks! A clear yellow straw coloured pour with a fine white head. Aroma is sour apricot, milky apricot cream, bile. Flavour is composed of sour pithy grape and citrus, apricot, oxidised. Palate is pthy, airy sour, bile, tangy. I don't like it.

From tap. Pours pitch black, small brown head. Aroma is roasted dark malty. Mild sourish. Dense malty and roasted. Sweet and slught sourish. Roasted dark malty, slight tarish. Bitter and dark malty finish.

Bottle at home from Cave a Bulles, 9th December 17. Pours black, with a nice tan head. Aroma is dark chocolate, cocoa, coffee, slight liquor. Taste is smooth, dry, cocoa, chocolate, barrel, yes some cognac, bitter and dry, lovely Imerial Stout.

Pours black, small white head. Smell is sharp, bit burnt. Taste is full, sharp, roasty , grainy, burnt coffee. rather high carbo.

Pours unclear blonde, not much head. Smell is dry, wheat, full aroma. Taste is sharp, bitter, crisp malts. No wheat here. Rather high carbo.
