Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Cloudy dark brown beer, creamy beige head, pretty stable, bit adhesive. Aroma: lots of coffee, lots of chocolate as well, sweetish impression, roasted, dried fruits, nice. MF: lively carbon, medium to light body. Taste: surprisingly acid, should've known if I'd had paid attention to the name, but it came in very surprisingly acidic compared to the aroma. Soft roast, some coffee, lemon juice. Aftertaste: bit of caramel, sourish, lots of lemon juice, lovely stuff...

Sampled @ Tilquin English Beer Festival 2018. A very dark brown beer with a small off-white head. Aroma of sweet raspberries, dark mild roasted malt. Taste of mild sweet roasted malt, red fruits, raspberries.

Bottle 330ml. @ [ chriso & Boudicca's pre- GBBF Shindig 2017 ] - Chris and Ruth's House, London. [ As Mont Salève Berliner Weisse Au Petit Lait ].ABV: 3.3%. Clear light to medium yellow colour with a small to average, frothy - fizzy, fair lacing, mostly diminishing, off-white head. Aroma is light moderate malty, pale malt, sweet malt, moderate yeasty, tart, lacto - soured milk - lactic. Flavor is moderate sweet with a average duration, sour milk, lacto - lactic acid. Body is medium, texture is oily to watery, carbonation is soft. [20170806] 6-3-5-3-11

Bouteille 33cl @ Niamey's monthly craft beer tasting. Achetée à Malt Attacks. Brune, col fin beige. Arôme est marqué par un effet malté, caramel, grillé portant sur le café, ressens rien en terme de tomate ou de minéral salin. Le tout est bien dosé sur les malts, peu d'impact amer. Palais est léger avec une effervescence moyenne voire haute, malté caramel, grillé/café et une pointe de chocolaté. Retrouve rien en terme de tomate, malt pâle, petite amertume houblonnée rappelant un houblon noble et effet minéral fin.

Many thanks to minutemat for this bottle. Dry roasted nose. The beer starts deep and rich caramelly. Lots of roasted malt, quite dry with coffee and dry bitter chocolate there. Long deep roasted malty aftertaste, caramel, dry burned sugars, hints of roasted bitterness, very smooth and soft with a great depth. Fascinating - especially for a French beer.

F: very dark brown, average to good retention. C: dark, opaque. A: roasted tones, a lot of coffee, chocolate, liquorice, cocoa, bit vanilla. T: roasted tones, dark chocolate, cocoa, coffee, dark fruits, very thick body, medium carbonation, very good black lager or dry stout :), 33cl bottle sampled @ RBBWG (10/03/2018), many thanks tderoeck.

Tasting glass draft @ Gollem. Near clear orange, soapy white head. Nose is round orange & grapefruit peel, bit sweeter caramel & huge perfume quality. Round bit bland plastic & orange peel, grapefruit, bit sweet & overly perfume taste. Body is perfume, caramel, okay but not fully there.

Pours unclear reddish amber. No real head. Smell is full, creamy cherries, bit of 'swimmingpool' . Taste is full, sharp cherries, over an aromatic base of tarntness and malts. Quite fu flavored and refreshing.

33cl bottle. A black beer with a huge most good lasting brownish head. Aroma of dark roasted malt, chocolate, some liquorice. Taste of dark roasted malt, bitter chocolate, mealasse, hints of mint chocolate, dry roasted bitter finish. Nice stuff!
