Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Bottle at home, from La Cave a Bulles, 10th February 18. Pours fairy clear. Aroma is citrus pith and pine. Taste is bitter, hoppy, Pilsner comes through. Nice to have a bitter assertive IPA. Good.

Tap at la Fine Mousse, 8th February 18. Pours black, aroma is roasted malt, chocolate and coffee. Taste is roasted, dark chocolate, bitter, smooth. Carbonation low to medium. Very good.

330ml bottle from Chez Sophie. Pours clear gold, thin white head. Aroma of grapefruit, citrus, fruity. Taste has a similar profile, with distinct grapefruit and additional apricot / peach hints with a long satisfying bitterness. Good DIPA, confidently hoppy without taking it overboard.

330ml bottle @ Chez Sophie. Pours black, thin off-white head. Lots of roast on the nose, bitter dark chocolate, dark malts. Taste is predominantly dry roast, medium carbonation, lots of charred roast on the finish. I don't know if it's the power of suggestion, or if it's actually there, but I seem to detect some tomato on the finish which isn't unwelcome I have to say. Odd how it works. Feel like pairing this with a tomato-heavy bolognese now.

Bottle at home from Malt Attacks, 20th January 18. First of a huge 27 bottle haul from a two day business trip in Netherlands and Belgium. Pours orange and hazy, with a lovely neat head. Aroma is citrus, pine. Taste is bitter, citrus, yeast, bready malt. Bitter linger. Lovely IPA.

330ml bottle @ Chez Sophie. Pours black, thin off-white head. Strong roast / soy sauce aroma. Rather slick and full-bodied with a rich roasted malt character, with dark chocolate, liquorice and soy sauce coming into view. Really enjoyable dark stout / schwarzbier / whatever.

330ml bottle @ Chez Sophie. Pours gold with a light mist, medium white head. Aroma is fruity citrus, light pine, grassy. Crisp on the palate, with just enough breezy citric hops coming through, a good confident bitter bite. Solid Pale.

330ml bottle @ Beer O Clock, Chamonix. Pours a misty gold, medium white head. Sorachi on the nose. Taste is crisp with a bracing bitterness, softened nicely by a good sorachi presence. Had to double check this was definitely 2.5%, as has a lot more body and confident hop flavour than it should. An excellent low strength pale.

330ml bottle @ Chez Sophie. Pours a misty golden yellow, medium white head. Wit-like aromatics with breezy citrus. Taste is light, fresh, zippy Belgian wit yeast, floral, rounded nicely with crisp Citra hops, light bitterness. Good fresh wit.

Draft @ the brewery. Pours a glowing gold, good white head. Aroma showcases a good, fresh, fruity hop profile. Taste is similarly fresh, hoppy, not overly fruity with everything held in balance and a perfect bitter finish. Sometimes, in a craft beer world of hazy, fruit-laden, murk-bombs, you yearn for a measured, confident, mature IPA like this.
