Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

Pretty cloudy amber to red beer, small off-white head, unstable, dissipates quickly. Aroma: very fruity, acidic, bit yeasty. MF: lively carbon, medium to light body. Taste: bit acidic, slightly fruity, bit yeasty, some cherry, soft bitterness. Aftertaste: bitter, some tannins, soft acidity.

Clear dark brown beer, creamy irregular beige head, little stable, bit adhesive. Aroma: very roasted, spicy, malty, caramel, coffee, nice stuff! MF: soft carbon, medium body. Taste: bit sourish, pretty bitter, nice roast, some caramel, fruity touch. Aftertaste: bitter notes, very roasted, bit dry, hoppy finish. Not really getting the tomatoes, but it's a nice stout!

Clear yellowish blond beer, small creamy yellowish head, pretty stable, adhesive, leaving a nice lacing in the glass. Aroma: malty touch, very fruity, tropical fruits, grapefruit, some pineapple. MF: lively carbon, medium body. Taste: very fruity, citrus, lots of sweet grapefruit, bit floral, nice stuff! Aftertaste: bitter, fruity, grapefruit, bit grassy.

Taste: pretty infected, spicy, bitter touch, sourish, funky, bitter and weird. Aftertaste: soft bitterness, weird, apples, sourish, infected. Well, I did get the apples.

Taste: very sourish, lemony, pretty dry, fruity, nice stuff. Aftertaste: very fruity, lemon juice, acidic. Not getting any apricots though.

Bottle at home, 17th November 17. Pours a dark amber. Aroma is deep pine, malt, chocolate even, citrus. Taste is grainy, citrus and pine, good depth of flavour, floral hops and good bitterness.

Bottle at home, 16th November 17. Pours clear and straw colour. Aroma is floral, citrus. Taste is clean, floral, nice and bitter and refreshing, easy drinking and very enjoyable.

Bottle picked up from Dranken Geers, Oostakker, nr Gent, Belgium, consumed at Isobel, Baz and Judes, Builth Wells, Powys, Wales, Saturday 11th November 2017 having just cooked Chicken Mole and a whole baked Cauliflower. Pours black with a slim off white head. Nice barrel ageing notes on the nose, the cognac also shows in the mouth. Some dark chocolate and coffee, roasty malts but not too sweet which is great. Lovely Imperial Stout, really like this. A8 A4 T8 P4 Ov16 4.0
