Always experimenting and expanding

We brew in small batches in our 15 barrel brewery and we’re always experimenting with new recipes. Dan and Pat ,with previous experience from the wine world, get to marry the fascination with the natural world and the art and science of fermentation.

Dan keeps cooking up some good recipes and Patrick the builder keeps finding ways to add more tanks and increase our production.

Pours a hazy still into a tulip. Ginger aromas. Soft with ginger and dusty yeast. Yuk.

Keg at The Reservoir - Waterbury, VT. Pours clear gold with a creamy, white head. The nose has lots of flowers, perfume, light bread and orange. Medium sweet flavor with lots more perfume hops, some melon, dry dry bread, grapefruit, slight pine. Medium bodied with fine to average carbonation. Lightly resinous on the finish with moderate grassy bitterness, floral hops, some pithy citrus, tangerine. Very nice overall.

Pours deep gold into a snifter. Off-white head with good retention recedes leaving spider lacing. Sweet resin, grapefruit and tropical fruit aromas. Thick with sweet caramel and resin upfront turning to tropical fruit before the lasting warm finish. Hmm - this tastes remarkably similar to the Trillium Melcher Street IPA I just finished.

A golden IPA with a thin lacing off white head. In aroma, piney and catty hops, citrus pulp, grapefruit. In mouth , floral and citrus hops, biscuit malt, alcohol warmth, very nice. On tap at brewery.

A hazed blonde with a thin white head. In aroma, sour mash, light lactic notes, a bit off. In mouth, a nice sour ale, with citrus and lemon, very nice. On tap at brewery.

A blonde ale with a thin white head. In aroma, sweet grassy malt with ginger. In mouth, a nice fruity malt with light grassy hops, faint ginger, nice.

Looks like peach juicy. Very cloudy. Champagne bubbles. Clementine and grapefruit nose. Very chewy and dank. Lots of fruit juice. Mouthfeel is a little flat. But the malt chewiness is off putting

Hazy dark orange. No head. More dank grapefruit and rye spice on the nose. So freaking chewy. Mouthfeel is good. IBUs don’t really match up to the malt backbone. Biscuit and ritz crackers
