Always experimenting and expanding

We brew in small batches in our 15 barrel brewery and we’re always experimenting with new recipes. Dan and Pat ,with previous experience from the wine world, get to marry the fascination with the natural world and the art and science of fermentation.

Dan keeps cooking up some good recipes and Patrick the builder keeps finding ways to add more tanks and increase our production.

Bottle shared in NH. It pours hazy golden - orange with a decent white head. The nose is soft, juicy, peach pie, sherbet, lemon verbena and apricot. The taste is crisp, bitter, quite dry, minerals, light alcohol heat, apricot jam, light floral notes and some warmth through the finish. Medium body and fine carbonation. Good fruity action. Not bad at all.

This was poured into a snifter.
The appearance was a semi-hazy bronzed golden color with a one finger white foamy head that dissipated within less than a minute. Clingy messy lacing roams around the glass.
The smell starts off with sweet grapefruit pulp. Light melon, and a little bit of honeydew blend into citrus rind nicely, sticky sweet with a balanced bitterness about it.
The taste was moderately sweet with a bitterness wanting to balance and somewhat does. Light sweet melon-like aftertaste runs into a sweet refined finish.
On the palate, this one sat about a light to medium in body. Sessionable to an extent, somewhat, carbonation runs good for a DIPA. Somewhat bitter with a nice creaminess strolling about.
Overall, for the most part, its a nice DIPA that I would love to have again.

Bottle shared in NH. Pours clear gold with a frothy white head. The nose has some bready malts, orange, light crackers, rind. Medium to heavy sweet flavor, ripening citrus, bread, melon. Medium to full bodied with fine to average carbonation. Lightly warming to finish, some sugary bread, light alcohol warmth,bore citrusy hops. Nice one.

This was poured into a pint glass.
The appearance was a hazy burnt orange color with a one finger white foamy head that quickly dissipated. There wasn’t any lacing.
The smell started off with a light ginger sweeping into light citrus tones over some light refreshing floral tones.
The taste was slightly sweet with the ginger combining a nice spice surrounding the flavor of the citrus. Wheat is fairly tame to allow the ginger to be the main flavor all around. There’s no aftertaste with a quick sweet to semi-spiced ginger finish.
On the palate, this one sat about a light on the body with a pretty good sessionability about it. The ginger is fairly tame on my tongue allowing the citrus and floral aspects add a nice sweet soothing crisp feel.
Overall, I say this was a nice American pale wheat ale with the ginger side being somewhat tame and adding some other nice tones to make a nice session on a late Summer’s day.

Location: 22 oz bottle from the Cabot factory store in Waterbury, 7/17/15

Aroma: The aroma is at first grassy, then floral, herbal, and a fruity, some grapefruit and berry
Appearance: It pours a cloudy golden-orange color with a thin off-white head and coating lace
Flavor: It tastes pretty nice, with a light sweetness, a clean bitterness, and a hint of spice
Palate: This one is smooth and fairly dry on the mouth, with a soft-to-average carbonation
Overall Impression: Yup, even the cheese shops in VT have craft beer. This one came through nicely for me. It hits the flavor profile you want from a Session IPA, without the wateriness you always want to avoid. Very drinkable, but that's not unusual in this style. No complaints. I'm a little surprised the scores here are not higher. I've had worse Session IPAs from more established breweries for sure. If they canned this and sold it in 6-packs, I've sure the craft loving population of VT would happily drink this while hiking, skiing, etc.

Bottle from Riley’s in Vernon Ct Lightly hazy deep golden color with a decent white bubbly head that persists. Resinous pine and tropical fruits with hints of bready malt. A hint of sweet bread but this is a damn fine beer!

Pours gold into a tulip. Bright white head with good retention recedes leaving spot lacing. Sweet caramel, citrus and tropical fruit aromas. Thin with sweet toffee upfront turning to bitter earth before the lasting sour citrus and pineapple finish.

This was poured into a nonic pint glass.
The appearance was a semi-hazy bronzed orange color with a one finger white foamy head that dissipated within less than thirty seconds. Messy stringy lacing roams around the glass nicely.
The smell had a sweet grassy to citrus sweet hops grabbing a light pine to integrate nicely. Decent floral tones back up as well.
The taste took the sweet blend of citrus to grassy and allowed a gentle underneath of bitterness, fairly low. A light sweet sticky citrus aftertaste leads into a sticky sweet finish.
On the palate, this one sat about a light to medium on the body with a fairly decent sessionability about it. Carbonation comes across nice - fairly smooth. Bitterness is once again fairly tame as it hits my tongue.
Overall, as an AIPA, it’s sweeter than some. Still, I actually didn’t mind a tame AIPA. I’d probably have it again.

Poured from bottle thanks Willrunforbeer dated 6-16-15. Pours light golden color with a thin white head. Aroma is spruce and it is the strongest flavor. Taste is not bad or over powering. Interesting.

650 ml bottle dated 16 June, 2015. Golden color without any head. Aroma is nothing but spruce. I really mean like striaght spruce. It is like they took the spruce tips, grinded them up and place a ton directly into the boil. The mouthfeel is on the lighter side with active enough carbonation. I have never had a brew with this much spruce, ever. Almost like drinking a Christmas tree.
