Brewery draught, 9/15/23. Bright, sparkling, highly effervescent, clear blonde-lemon-golden. Massive, well-retained, white head. More smoke in the nose than expected but lower salinity or nutty/biscuity wheat. Almost schlenkerla helles-like. Light lemon-like acidity on the finish. Clean. In the mouth there's significantly less smoke, replaced by a bright, lemon-like acidity that mixes with the angel food cake-like malt character to give an almost lemon merengue character. Ample texture, moderate attenuation. Maybe a bit more lemony than I'd prefer with more malt sweetness instead of more dry, nutty wheat.

Brewery draught, 9/15/23. Bright pink with some deeper red hues. Good clarity, large, pink-tinged head steadily fades to edge. Stunning nose is like smelling rich, fresh plaster. So much mineral with beautiful grape skin. Calcium and/or chalk, but in a good way. Fruity grape notes hit on the end, alongside ample honey and biscuit character from malt. Low barrel character, mellow. In the mouth it doesn't quite live up to the nose, but that's not too surprising as that's near a perfect nose. More tartness and acidity. Could use a bit more mellowing, but the flavors are excellent, with tons of red grape fruit and bright acidity alongside a supple malt texture with high attenuation.

Brewery draught, 9/15/23. Clear, bright bronze-maize. Small, white head, low retention. Vivacious nose with plentiful lactic acidity and some moderate brett. Very fruity, earthy, mineral-driven and with an assortment of rustic grains. Probably some grape-like acidity/fruitiness and earthiness; I assume that's where most of that is coming from. Rustic and with plentiful cracker and biscuit, dry, tart, fruity. Good attenuation with light white wine character and strong fruit and mineral. Grape-like acidity but no hugely overt grape flavors. Good oakiness lingering.

Bayberry draught, 9/14/23. Clear, amber-infused maize. Small, white head, moderate-to-low retention. Nose is quite bready with lots of this triticale character giving an almost popcorn-like character. Specks of caramel, honey and very low hopping adding only a touch of pepper and floral notes. Clean. Flavor is initially crisply-hopped and quite grainy, growing rather bready and with no lasting hop bitterness. Kind of a crusty/grainy texture that I don't love with too much bread throughout. Needs more soft, sweeter, deeper malt and/or refreshing hop bitterness.
