750mL bottled 3/22/22, drunk 6/23/23. Clear, deep purple-violet-raspberry. Large, pink head, modest retention. Big bursts of juicy grape acids and chalk with huge minerality and a healthy mix of lactic/acetic/brett. Clean, funky, lambic-like with a massive aroma. In the mouth it's spicy with black pepper-like notes as well as chalk and juicy acidity from the grapes. Low oak, soft malt and wheat with good attenuation. Quite sour, but not too much so, with only a bit of acetic and tons of lactic acidity.

750mL bottle, batch #1, Jun 2021, drunk 6/22/23. Bright, cherry-red. White head sitting at cover. Clear. Nose is just wow. Clear, clean, bright, strong and aromatic with bits of herbs and spice. Cranberry adds a bright acidity with soft salinity and hints of spicy citrus. Soft wheat. Mixed culture is refined with well-aged, mellow characteristics. Soft, juicy, tart, without any overly acidic cranberry. Soft, nutty wheat, juicy orange, lactic acid with peppery notes and deep, lightly honey-tinged malts. Just enough sweetness but still refreshing and tart.

750mL 7.12.22, drunk 6/16/23. Pink-plum. Hazy despite long stay in the fridge. Big, pink head. Nose is everything you want. Mineral, sulfur, skin, Brett, no acetic, moderate lactic, juicy plum. Soft, nutty wheat. Leather, walnut, more Brett. Clean, no alcohol. Soft, wheaty, nutty, malty, good attenuation. Juicy, big Brett, moderate lactic, no acetic. Yeah, this is a frickin beach plum lambic. Legit as hell. Sulfur, mineral, barnyard. Lingering plum.

375mL bottled April 1, 2022, drunk 5/28/23. Minimally clouded, leaving sediment behind as best as possible. Bright apricot-copper, small, off-white head to ring. Beautifully funky nose with plentiful lactic acidity, very light acetic and moderate brett. Rich, rustic grain behind it adding wheat and light honey-like pils malt. Good barnyard elements, with juicy brett on the finish. No alcohol or flaw. Soft, wheat-slick texture but with some biscuity, rustic malt as well. Good malt depth and attenuation to balance the fair bit of acidity. It's certainly quite sour, but not overly or acetically so. Mostly lactic with soft, juicy brett, good oak tannin and lingering malt/wheat. Excellent barnyard funk and very, very lambic-like.

Canned 2/8/23, drunk 5/28/23. Large, moderately-well-retained, dark beige head atop a clear, dark mahogany body. Nose is excellent base malt with light specialty malt adding just a bit of roast and toast. Mild coffee with honey, graham cracker and strong minerality. Herbaceous hops but gentle. Clean and no alcohol noted. Malty, great textures with chocolate, vanilla, honey and good, balancing bitterness on the finish. Toasty, quite drying on the finish as well. Clean, no alcohol noted.
