Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Pours a nice clear gold from a bottle. Nice clean sweet apple aroma and flavor. Oak aged version is better. Pretty good cider.

Pours a very effervescent hazy straw from a bottle. I like Travlr's description of the aroma "dusty apple skin", sounds about right. Similar flavor, quite dry and with the faintest of smoke notes on the finish, or at least I perceive it that way. Unfortunately way too bubbly for my taste, very distracting. Pretty good cider.

Pours a hazy yellow-orange from a bottle. Nice green apple, unripe pear aroma with a little yeasty funk. Flavor is similar, quite dry and somewhat effervescent. Very good cider.

Glad I was lazy & didn't have to add this. Thank you Brits! Rare Vos glass @home. $15 four-pack from Appalachian. Concerned by the low abv, but this Eden budget line has always been solid. This is the first Harvest blend I've seen that incorporates zero heritage apples, but ferments on some second use grape skins like a piquette. Clear, vibrant, classy gold pour. Quick reaching soda head. Very fumy, floral apples with some significant sour melon/table grape-ish punch. All the Harvest blends seem to have this bold aromatic, fresh apple skin quality. Taste is Mott's, but much less juice box. Very floral apples, bittersharp, apricot, lemon, saline, big white grape acidity, borderline sour that is just a hair too aggressive, weak but appreciated tannic nibble through the finish. Almost dry. Headache, but no sulfites added. Creative blend. Again, love how they're pumping out solid flavor at a good price point.

Bottle from the source. Clear deep yellow color, Aroma of applesauce, dried leaves, apple skins. Taste is earthy apple, tannins, bone dry and delicious.

Batch 2020 NS101, thanks Gene! Drunk 7/3/23. Clear deep golden. Super peppery, some light alcohol. Baked apple. Papier machee, more pepper. Soft, sweet, juicy, rich, heavy honey with baked apple, cinnamon, spicy, acidic, balanced. Good lord that's intensely good. Lingering spice, honey, vanilla. Baked apple...pie? Definitely.
