Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

355ml can from Stowe Public House & Bottle Shop. Misty pale yellow complexion. Nice natural fruitiness coming through, hazy, quite dry with a pleasant fruity eating apple linger.

355ml can from Cat in the Glass. Hazed golden yellow appearance. Not much in the way of an aroma. Taste brings curious desert-like apple features, mirage-like custard with tart juicy green apple fruit, gentle tang, soft acidity with additional green citrus and a grapefruit bitterness. Interesting characterful apple fruit. Decent.

Purchased from the online holiday sale. Bottle all to myself @home. Tulip pour. Clear pale gold, a little dull. I thought this was still, but I'm getting a little sizzle. Yeasty, sour peach, sour grape, white pepper. Really reaching to find something more. Saline, low tart, earthy, creamy yeast, lots of acid under the first layer. A little spice & core, but it really isn't enough to keep going. Meh.

This was cheaper to acquire direct & shipped than at my local... Tulip @home. Corked not caged. 2019 batch. Clear, middling gold, intentionally still, but with the tiniest of particles in suspension. Pineapple-apple-orange juice box, grassy, un-ripe stone fruit, dewy sweet-smelling flowers. Light & airy. Bracing & sharp upfront, with a tang of complex green/sour fruit lengthwise. It bulges out with zest then gets thin & wine-y. There's an obvious classy red skin Mcintosh note in the middle there(it's reassuringly apple-y). Right near the end everything gets mellow & you sort of get into frosting/marzipan feels when it drags out dry. Clenching finish. Pretty impressive for just 6%. This is the kind of fun still bottles we use to get from Eve's(Albee Hill) before they wanted to be more pedestrian in that line. Very good to great.

750ml, sharpied label from the source. Pint glass @home. Soda spritz, very slightly opaque not hazed. Mellow, unfiltered fresh cider color. Stuffy & volatile & first. Dry grass, butter, apple peel, graphite, dust. Stiff, bittersweet leaning bitter. Apricot, caramel dipped apple, spent wood, whiskey, honey-coated Aspirin. Strong astringency, medium acid, medium low tart, juicy. Almost a true dry finish. Zero funk. A messy cocktail with nothing quite in unison. Very crispy, strong carb, thin, residual yeasties, harsh. A good stiff drink when all you really wanted was a palatable cider. I feel this represents a lot of Eden products before they add their signature ice cider back sweetening that tends to cloud people's judgement of the final product.

14/1/2023. Bottle at the Haderslebener tasting. Pours clear bright amber bronze with no head. Aroma is rich stewed apple. Medium sweetness, light tartness. Medium body, oily and sticky, no carbonation. Condense and boozy apple magic.

Pours a ruby color from a bottle. Aroma is an intense vegetal note, similar flavor with astringent tannins. Bitter. Unique. Probably good in the right situation and with a creative mixer, but on its own not something many would enjoy. Good cider.

ABV: 10.0%. Clear medium orange yellow colour with virtually no head. Aroma is apple, tart apples, frosty apples, oak, rich intense apples, baked apples - stewed apple. Flavor is moderate to heavy sweet with a long duration, apple, rich intense apples, frozen apple syrup, baked apples - stewed apple, tart apple finish, dry. Body is medium to full, texture is creamy - syrupy, carbonation is flat, finish feel is warming. [20230114]
