Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Bottle @ Haderslebener beer tasting. No head. Color is golden. Aroma and taste are rich intense apples, fruit sugar, little alcohol and just has so much apple flavor in a drop.

Bottle @Haderslebener Tasting. Clear golden, no head. Fermented, baked apple aroma. Sweet flavour, fermented, baked apple, nice acidity to balance the sweetness. Great.

Clear bottle from their online shop during there 20% & free shipping promo. Tulip @home. Disappearing act soda head. Faintly hazy & thin, pale gold. Iodine, soggy pear, moss, vinegar twang. Bittersharp & twiggy. Lemon juice, white wine, mushy crab apples. Big, irritating acidity. Faint sidra notes of gum, rubber & vinegar. Some mellow tartness on the quite earthy finish. Yeasty residual, kinda boozy, harsh soda carbonation, acid-y belly. Finishes off-dry & slippy. Complex, just not hitting what I want.

Pours a nearly clear faint yellow from a can, no head. Very light apple aroma and flavor. Very pleasantly dry with light hop notes. Have given to many including a number of skeptical cider drinkers ("I'm worried it will be too sweet") and it's been overall good feedback. Good cider.

Single from Eden. 15% off & free shipping for the holidays. Mojito glass @home. Can reads 15g of sugar per liter & that it is semi dry. Not sure how that correlates to the Brut label, but here we go. Clear, watermelon, sizzle pour. Smell is sweet non-descript berries, white sugar, cranberry juice. Taste is that crispy desert flesh & taut skin profile you find in all the Harvest line-up. More sugar than the other three cans, cranberry/currant, plus some syrupy body bleeding through the force carb. Very end has some odd oxidation. Tis okay.
