Pedro Souza devoted himself body and soul to the development of his own craft brewery, which he founded in September 2013 in Alvarelhos, Trofa.
At the beginning of 2015, the result of "a lot of resilience and persistence" comes out on the market: the first ready-to-serve beers produced by Post Scriptum Brewery. Today, the Trofa brewer is proud to see the business he built by himself "grow every month".

Review based on the BJCP2015 guidelines (style 31B). Bottle 33 cl - Batch L.ESP15001. AROMA: predominant slight sweet honey aroma, resembling mead. light to medium alcohol aroma as also some fruity esters. background malty notes (toffee). APPEARANCE: ambar color and murky. excessive foam of ivory color, with good retention. TASTE: honey flavor with slight fruity notes and a very faint background of caramelized malt. low bitterness with a semi-dry to dry finish. balance towards sweetness but with a dry finish. PALATE: medium-low to low body with very excessive carbonation (gusher). OVERALL: an amber ale with honey with some balance, but still towards the honey. needs carbonation improvement

AROMA: slightly sweet with notes of dried grapes, slight almond note and faint strawberry jam. no alcool nor phenols detected. APPEARANCE: dark ambar color and clear. medium-low head of ivory color with low retention. TASTE: like the aroma but more faint with a slight caramel note and not much else. slight flavor of lacquer and solvent. low bitterness with a semi-dry finish. PALATE: light body with low carbonation. slight astringency. OVERALL: a dubbel with odd aroma notes with a bland flavor profile. needs improvement.

AROMA: cooked vegetal and cereal husk notes. faint malt background. very faint caramel note and indescernible Maillard products. APPEARANCE: ambar color and translucent (just slight hazy). Medium-low head, creamy, ivory colored, with medium-low retention. TASTE: dominant flavour of some cereal hull, yeast and some faint esters. faint caramely malt note and indescernible Maillard products. Medium bitterness with a dry and bitter finish. PALATE: medium to medium-low body with medium-low carbonation. Slight astringency note. OVERALL: a doppelbock with husk notes that mask a faint malt presence. a good base for improvement.

APPEARANCE: deep red color and just slightly hazy. large pink head with medium-low retention. TASTE: overall cherry flavour with a faint sweet background but with very faint hints of acidity. low bitterness with a dry finish. PALATE: medium-low to low body with medium-high carbonation. OVERALL: an interesting fruit beer that is an alternative to lambics but without much complexity.

AROMA: intense roasted malt aroma with notes of coffee and dark chocolate. background of slight sweet malt. soft alcohol aroma and no hop discernible. APPEARANCE: dark brown color and opaque. medium-low to low brown head with low retention. some viscosity with lacing formation that doesnt stand. TASTE: intense roasted malt flavours with notes of coffee and dark chocolate that are overwhelmed by a medium-high roasted-burnt flavor. Medium to medium-high bitterness that lasts into a dry and burnt finish that persists. PALATE: medium-low body with. smooth alcohol warmth without being too hot. medium-low to low carbonation. OVERALL: an unbalanced batch of what was a very good imperial stout, leaving a burnt flavor on the mouth.

APPEARANCE: gold pale color and slightly hazy. thin white moussy head with good retention. TASTE: slight cereal flavour with slight cereal hull notes and some diacetyl. clean lager profile. medium-low bitterness that persists into a semi-dry finish. PALATE: medium-low body with a slightly slick sensation. average style carbonation. OVERALL: a nice pils lager, very drinkable with slight cereal hull notes but with a good lager profile and malt flavour.

AROMA: tilted towards a nice hop aroma with floral, slight tropical fruits and some pine notes. background malt aroma with some caramelized notes. very faint cereal hull aroma. APPEARANCE: dark ambar color with orange highlights and slightly hazy with some material in suspension. average off-white head with good retention. TASTE: slight sweet malt flavour, combined with a floral and slight tropical fruit hop flavour and some resin. High bitterness that lasts into a semi-dry finish and beyond. PALATE: medium-low body with a slight velvety texture. medium-low carbonation. very slight alcohol warmth and no astringency. OVERALL: a nice and aroma-wise complex Double IPA that lacks a bit more hop flavour complexity. nonetheless very good.
