Description
Founded on July 1st 2016, Brouwerij De Feniks is all about Living your Passion (in our case : brewing the great beers we love and helping others do to the same) and keep doing what you love no matter what. As you only live once, you will find out at some point that it pays off on emotional/satisfaction and many other levels to follow your passion. Under adversity, if you stumble and fall, or even crash and burn, remember that you can Always rise from your ashes like the mythical Feniks bird as long as you keep believing and continue to live that passion... And if you do, have a great beer on us !

Pours black, bit darker head that seems to be rather instable. Smell is roasty, oat in a very high amount (you get what is promised, I guess ) some very mild dark chocolate. Bit grassy notes from the hop ( more hidden) . Taste is sharp, mildly bitter, somewhat fishy ( yes, like fish - a factor I had before in german beers, but in a very different perspective ) High carbonation, bit ( very mild) of the plastic features, I assume from a fermentation-related problem ? somewhat metallic. The oats are there, and its more of a stout than many other Belgian Wannabe stouts, but it’s simply not ideal at this point. perhaps it will get better in time (the Brewery is rather new, so we should give them time to get experienced) In the meantime though, good try, but this needs a fix, sadly enough.

15th May 2017: 330ml bottle in De Bierboom, Brugge. My second beer from this brewery today. Golden pour, white crown on top. Harsh hop bite to this highly carbonated tripel, liked it.

15th May 2017: 330ml bottle in De Bierboom, Brugge. Full and lasting beige head on the amber body. Good hop profile with a citrus leaning in both the aroma and flavour. A fine start to our Brugge drinking day.

Bottle. Pours very dark brown, rather small white head. Smell is weak. mild sweetness, but not like the usual type of sweetness in beer. some chocolate notes, some fruity notes, some candy Sugar. all in very fine, hidden notes. Taste is rather bitter, some dark malts, dark Sugar, dried fruits ( dades, raisins ) , some dark malts. mild boozy. Not super intense in taste. high ( to high) carbo. OK . I don’t get the anis ( Lucky me ) , I dont get the peppers but can recognize a spicy touch when I read they’re in here. I dont get cumin ( but I don’t think i know that taste ) and cardamon is not recognizable either. I like they didn’t overspice it, but if they’re gonna name it, I’d expect to taste it a touch more. Not complaining, being not much of a spice fan, just wanting to let y’all know its not an overspiced beer by far.
