Description
Weyerbacher Brewing was founded in 1995 in a livery stable located in downtown Easton, Pennsylvania. Eventually outgrowing that small space, we made the move to the 30,000 square foot facility that we still call home today.

Since the beginning, we have established a reputation for making big, full-flavored, high quality brews. While predominantly known for Belgian-style brews including Merry Monks and QUAD, we have an extensive barrel aging program which produces fan favorites including Insanity and Riserva. In recent years, we’ve dipped our toes into IPAs and other lower ABV styles with great success.

Experimenting with different ingredients and brewing techniques, our brewers continue to stretch their creative minds and develop interesting and mind blowing beers that will satisfy your taste for the extraordinary.

Black with a small tan head. Toasty with intense booziness, bourbon, wood and a bit of cocoa. Incredibly long finish. Full bodied

Cellar beast acquired in trade so long ago. Black pour with a thin tan head that's still hanging around after I take that picture. Nose seems, well, a little off. Not bad, just hard to decide what I like here. A few more sniffs, though, and I can pick up some roasty malt and alcohol. The taste is a little more mild than the nose. Glad I was able to hold to this for solomg and find it's still good.

10th Anniversary batch from 2005, picked up in trade Another cellar clearance. Caught a whiff of green apple as I popped the cap. Pours a deep brown but not cloudy, a very thin head that was gone before I could take the picture. Smell in the glass has some of that green apple, citrus, some weak malt, but no really off flavors. Deep ale flavor, tends a bit toward an aged barleywine. Still some effervescence, malt mildly tempered with some old hop bitterness. Held up pretty well.

Reviewed from notes.
Can to tulip.
Appearance: golden yellow color with a one finger white foamy head which dissipated nicely to leave some light lace
Aroma: pears, bananas, green apples, crushed clove and some Belgian sugars, subtle grassy-like hops with light floral to hay-like notes
Flavor: tart then sweet to sour balancing the prior noted aromas; finishes with the pears, bananas and grassy/floral hops
Texture: medium bodied, good sipper, plenty of sour/tart harshness hits the tongue to provide a good pucker factor but I didn't mind for me
Overall: pretty good sour ale hits with a good sized ABV and make a decent effort of trying to present this as a Belgian ale.

Bottle to tulip.
Appearance: dark brown in the pour and in the glass, no head and no lace
Aroma: lots of dark berry sweet to tart to sour aspects not through any hops but the berries themselves then a light citrusy hoppiness
Flavor: tart to sweet to sour encompassing the prior noted aromas fully; finishes full of all kinds of berries and citrusy tones
Texture: light to medium bodied, leaning to be a sipper as enough tart and sour vibes hit the tongue with a good pucker factor
Overall: pretty good dark sour ale worthy of coming back to.

Bottle to snifter.
Appearance: black in color with a film of a little white foamy head once dissipated there wasn't any lace
Aroma: sweet and tart red raspberries up front with a nice balance of cocoa powder, subtle coffee tones with a roasty and sweet side further underneath
Flavor: sweet and roasty at first then a subtle tart arises from the raspberries; lean finish of raspberries and cocoa
Texture: medium bodied, good as a sipper, some smoothness but also some tart abrasiveness and a touch of dryness
Overall: an enjoyable experience of a nice dessert beer!

Traded for some high-proof Weyerbachers in 2005. Really? Another Cellar-clearing special:
Pours an amber color with no head. I can hear some fizzing as I pour. Thick sweet malt smell is more "aged" than oxidized. A little wild yeast or barnyard ferment. Light Belgian fruit and tart at the same time. Then a slight banana and clove aftertaste. Probably should have just enjoyed this more fresh. A lot of dregs to swirl up toward the end of the glass.

Golden color with an alcohol aroma. Flavor does not match the typical tripel taste. It has the alcohol burn at the finish but was missing the sweet candy flavor and fruity character. Only had very light Belgian fruity flavor, taste was more like a regular Belgian strong.

Backlog January 2009. Reddish orange body under a nice, dense beige head. Aroma is complex and vinous with malt, raisins and warming alcohol. Taste is sweet, malty, dry fruit, caramel, warming alcohol and classic American hops. Fine body with long lasting aftertaste. Nice, big beer indeed.

A social attempt at a Belgian quad. Single fermentation. Some of the aromas and flavors of the style but nothing to notable. Little more sweet than bitter with okay carbonation and body. These guys used to be much better.
