Description
The microbrewery is founded by Achilles Van de Moer on the passion for special beers. After 7 years of trials with different beers, the decision to start a microbrewery in Itegem was made in 1999. The brand name of beers is “Serafijn”. All beers are high fermentation brews, with second fermentation in the bottle. Most of the beers are contract brewed, but some of them are also brewed at their own location.

In 2015 Achilles became part of Caupona bvba (of the Prik & Tik stores in Heist-op-den-Berg and Herselt). The brewery is now called ''Brouwerij Serafijn.'' That is the new company in Heist that houses the Serafijn beers. The former microbrewery in Itegem has been dismantled.

The beer is now brewed at the Pirlot brewery in Zandhoven.

Bottle. Hazy dark orange with small white frothy head, vanilla like aroma, medium carbonation, spicy taste, longish finish. Very good brew!

Troebel donkergeel bier zonder schuim. Smaak is zoet en fruitig, vanille, perzik en appels. Erg goed bier, smaak blijft redelijk lang hangen.

Helder donkerrood bier met veel schuim. Smaak is licht zoet en fruitig, kersen, caramel en anijs. Komt helaas iets waterig over maar smaak is gewoon goed.

Donkergeel levendig bier met veel schuim. Smaak is zoet en krachtig, licht bitter hoppig, honing, citrus en anijs. Smaak blijft redelijk lang hangen. Erg goed wat mij betreft.

Mostly clear, deep brassy-amber body is topped by a small white head with moderate to low retention.
I’d always wanted to try something from this brewery, but haven’t read anything overly outstanding about them, and after a few sniffs from the glass, I wasn’t feeling too optimistic. Sweetbreads, light cake icing and near-spoiled peaches, with some rustic earthiness all lead me to believe I was in for an underfermented journey...Granted, the alcohol wasn’t too apparent, nor were there any raw/fusel-like notes or horribly offensive esters (not a nose full of bubble gum/cotton candy), though the peachy notes were a bit off-putting....
And yes, sweet in flavor it certainly was, though there was something a touch endearing that somewhat saved the experience. Bready flavors and sweet honeyed malts combine with a zesty fruitiness (peaches, nectarines) but at the same time are almost balanced by a dry, earthy flavor that could either be hops or yeast phenols/acids. It gave the impression of an American trippel, being otherwise quite clean and rather simplistic. Citrus rinds, pineapple and sweet white dough persist on the end, with a bit of alcohol warmth. Fine. Was expecting a lot worse based on the aroma. Not syrupy nor underfermented, despite the high level of maltiness.

19/IV/15 - 33cl bottle from Willems (Grobbendonk) @ home - BB: 14/III/15 (2015-458)

Clear purple brown beer, aery fizzy beige head, little stable, non adhesive. Aroma: lots of dried fruits, some chocolate, caramel, bit sweet, banana, some yeast. MF: ok carbon, medium body. Taste: bit sweet, caramel, banana, dried fruits, sugary, fudge, some yeast. Aftertaste: yeast, spicy, caramel, some cloves, banana, alcohol, sugary, soft bitterness.
