Description
D'abord connue à sa création en 2017 sous le nom de "Ferme Brassicole des Cantons".
Elle est d'abord située à Orford, (1700 13e Rang) et brassent ses bières chez le Collectif Brassicole Ensemble. L''établissement ferme cependant ses portes avant de brasser localement.
Les bières continuent alors d'être distribués sous le nom "Des Cantons".
Un Pub ouvre finalement à Magog (20 Rue Merry S) en 2022 sous le nom de "Microbrasserie Des Cantons" . Le concept a été réfléchi par trois partenaires d’affaires bien connus dans leur domaine respectif dont celui de Bières des Cantons. Un des entrepreneurs est aussi propriétaire de la Microbrasserie La Memphré.
Suite à l'ouverture du pub, les bières sont toutefois toujours brassées au Collectif Brassicole Ensemble.

Hazy, pale yellow color and a nice white head. Citric-funky nose. Taste starts decent bitter, lemon, herbaceus, a little yeasty and funky. Clear golden color and a nice white head. Nose of tropical fruits and grapefruit. Pours a hazy golden-amber colour with a huge frothy off-white head, very long lasting and leaving big soapy thick lacing. Alcoholic warming nose with citrus (orange juices and hints of grapefruits zest). The taste has the citrus peel and juice combo. Just enough dryness in the mouthfeel, but still refreshing. Hints of spiciness from the hops and again, a little warming touch. Not the juiciest NEIPA and a super big head that makes you wait to have a first sip - but a an organic one that is quite well-brewed. Will have again.

Aromes typiques de banane et de clou de girofle sur une base de blé relevant de légères notes de pain.

Énorme mousse blanche et crémeuse se dépose et s’éternise sur le liquide doré et voilé duquel se dégage un volcan de bulles.

Esters et phénols dominent largement la bouche avec des notes de banane bien en évidence mais avec un clou de girofle quelque peu effacé.

Une légère acidité enrobe le tout.

La base maltée aux notes de blé est subtile.

On ne dénote aucune saveur de houblon.

Les esters dominent les phénols au détriment de l’équilibre.

La corpulence est moyennement légère et l’effervescence assez active.

Acceptable mais pas dans les meilleures Hefeweizen que j’ai gouté.

Can: Poured a pale yellow color ale with a large pale white foamy head with good retention and some lacing. Aroma of citrusy hops undertones with light juicy notes is enticing. Taste is also a mix of citrusy hops notes with some juicy undertones with a semi-dry aftertaste. Body is light with good carbonation. Very enjoyable sessionable IPA.

Pours a very lightly hazed golden colour with a slight off-white bubbly head that stays a while and leaves foamy lacing. Light grainy cereal malt nose with eventually some decent hops that hints on the berry side. Same mild cereal grain taste with some nice hops in the finish. The mouthfeel has a good dryness because of these, and some nice crispness. This is quite a nice refreshing organic blonde beer for summer.

Darker amber coloured, clean, with a big creamy light-beige head, great retention and thin creamy lacing. Hoppy aromas of grassiness, green leaves over the caramel malts and light fruitiness. Flavours are also fruity malts with the hops taking over. Fairly bitter and dry, but a red lager, so not too crazy in your fave. Nicely balanced overall for these styles.
