Established in 2011
We designed and installed our 18 barrel brewery during 2011 and brewed the first full scale gyle in November 2011. The equipment was custom built for us in Burton upon Trent.
The brewery is on the beautiful Notley Farm estate on the Oxfordshire Buckinghamshire borders, with far reaching views over the Chiltern hills. We are as eco-friendly and sustainable as possible; recycling nearly all our waste products and our spent raw materials go to local farmers to feed their cattle and pigs.

Wooden Cask. Clear deep red beer. Bubbly pale tan head. Palate is light and semi dry. It’s also lightly crisp from the fine carbonation. Good tangy fruits - cherry and dark fruits, blackcurrant just about identifiable. Very light touch of dark malts. Dry crispy finish. Tasty and somewhat off the beaten track.

Pigs Ear. Wooden Cask. Pretty much a clear amber beer, few pale cream coloured bubbles, not really making it as a head. Light semi dry palate with mild fine carbonation. Generic fruits. A touch of spice and mellow vanilla-wood. Little orange marmalade before the semi dry finish. Well this is really rather nice! Nice contrast between the vanilla and marmalade.

Cask at the Watford Beer Festival 2013. Poured a slightly hazy ruby with a small, rocky off white head. Aroma of toffee, mango and straw. Toasted malt flavours with notes of melon and sharp fruit. Finish was grassy hops, light coffee and brown sugar.

Cask (handpump) @ EBF15 2013, 15th Egham Beer Festival, Egham United Services Club (EUSC), 111 Spring Rise, Egham, Surrey, England TW20 9PE.Clear medium orange yellow color with a average, frothy, good lacing, mostly lasting, white to off-white head. Aroma is moderate malty, fruity malt, pale malt, grape, wine notes. Flavor is moderate to heavy sweet and bitter with a long duration, wood, fruity, grape - wine, malty, sharp, dry, pale wood, hop and wood bitter. Body is medium, texture is oily, carbonation is soft to flat. [20130809]

Cask gravity at Firkin Ale House Folkestone. Black beer. Bit smoky like smoked fish. Not much condition. Some chocolate. Chocolate on finish. Tasty. Good

Cask, gravity at XT Brewery Open day, Saturday 30th November 2013 I nipped to the loo get back and Russ (brewer) has thrust another beer our way to Loz. This is indeed a very interesting take on the XT 9 which in itself has now morphed into a Black IPA. We had the standard XT 9 earlier which was very fresh, wonderfully hoppy in fact more than a match for the XPA, this version however was quite different. The Oak Ageing has restrained the hops, they are still there but are calmer, not as zappy, as expected there is a softening, touch of oaky vanillayness, but then there is an added dimension with the wild yeast it has a distinct but subtle light sourness at the edge which again lifts this back up and adds a further intriguing element. It is a very good beer, if I am being honest the XT 9 standard version is still the one to beat but I do like this take on it, lovely beer. A7 A4 T8 P4 Ov15 3.8

Cask, gravity at XT Brewery Open day, Saturday 30th November 2013 Copper in colour good clarity, slim white rim of bubbles. Nice fresh nose, the spiciness is very well done, hops also good, nice fizzing mouthfeel, little buzz, this is a very nice Xmas beer. Russ (brewer) went and cracked open last years version i.e. 2012 so I got to try the 2013 & the 2012 both were hugely enjoyable the 2012 was extremely mellow A7 A4 T7 P4 Ov14 3.6

Cask, gravity at XT Brewery Open day, Saturday 30th November 2013 Warm gold, slight haze, buzzy bitterness, bubbly white head. At once this is crisp green fresh hops but with a persistent buzz, bit like a more gentle Ruination. Fruity, blisteringly hoppy, marvellous. Despite the hoppy onslaught this is actually dangerously drinkable. Big citrussy punch with grapefruit prominent, we’ve missed out on this beer before, so really glad we got to try it today. Cask gravity at The Firkin Ale House 1st birthday. Hazy gold lasting white head. Grapefruit earthy aroma some pine and resin but mostly fresh yellow grapefruit and a certain earthiness. Good solid apa. Some hop on finish. Some bitterness 3.6/5 re rate even better big grapefruit. Fresh from being tapped. Just my kind of beer.
