For 20 years, Shmaltz championed contract brewing and developed a dedicated cult following for their award-winning HE’BREW – The Chosen Beers® and company tradition, Shmaltz opened its own New York State production brewery in 2013, boasting a 50-barrel brewhouse with 35,000 barrels of annual capacity. Shmaltz brewery packages 12 and 22 ounce bottles and kegs of their diverse core and seasonal favorites. Several new releases and collaborations are on tap for 2016, and Shmaltz will continue their acclaimed barrel-aging projects, utilizing a current inventory of more than 400 bourbon, rye whiskey, and tequila barrels.

22 ounce bottle into snifter, bottled on late 2011. Pours pours nearly opaque dark brown color with a 1-2 finger dense khaki head with good retention that reduces to a thin cap that lingers. Light spotty soapy lacing clings on the glass, with some light streaming carbonation. Aromas of big molasses, toffee, toast, caramel, dark bread, brown sugar, raisin, cherry, prune, fig, chocolate, cocoa, tobacco, leather, light smoke, herbal, and roast/toasted earthiness. Damn nice aromas with great balance and complexity of dark/roasted/bready malt and fruity yeast ester notes; with good strength. Taste of huge molasses, toffee, toast, caramel, dark bread, brown sugar, raisin, cherry, prune, fig, chocolate, cocoa, tobacco, leather, light smoke, herbal, and roast/toasted earthiness. Slight herbal/roasted bitterness on the finish; with lingering notes of molasses, toffee, toast, dark bread, brown sugar, raisin, cherry, prune, fig, chocolate, cocoa, tobacco, leather, herbal, and toasted earthiness on the finish for a while. Incredible complexity and balance of dark/roasted/bready malt and fruit yeast ester flavors; with a great malt/fruitiness balance and zero cloying sweetness after the finish. Light-medium carbonation and very full bodied; with a very smooth, creamy, moderately slick, and lightly syrupy/chalky mouthfeel that is great. Alcohol is extremely well hidden with only a light warming present after the finish. Overall this is an incredible strong ale! All around outstanding complexity and balance of dark/roasted/bready malt and fruity yeast ester flavors; and extremely smooth to sip on for the huge ABV. A highly enjoyable offering.

650 ml bottle. Pours a dark brown/red with very little head. Aromas of dill, bourbon, and dark fruit. Flavor are similar with additional notes of oak and sour mash. Interesting mighty mix. Stands out.

Pours deep mahogany into a snifter. Mocha head with excellent retention recedes to coat surface. Dark chocolate, sourdough pumpernickel, and dark pit fruit aromas. Thick and full with sweet caramel and soy sauce upfront turning to licorice and candied hot chocolate covered cherries in the lasting finish.

Draft at Sedona Charlottesville. Pours a clear dark copper color with a medium sized creamy off-white head. Good head retention. Aroma of toffee, caramelized sugar, brown sugar, booze. The taste is toffee, booze, brown sugar, herbal notes. Medium-full bodied, low carbonation, hot.

From the August 2014 3R6P tasting. +++ Sampled from a 22 oz brown bottle this beer poured a very dark brown color with orange highlights and a large foamy tan head that lingered and left decent lacing. The aroma was tart and sour cherry, vinegar, banana, bubblegum and port wine. The flavor was tart and sour port wine, vinegar, banana, a hint of vanilla and coconut. Medium length finish. Moderately full bodied. Very complex. Interesting.

Bottle consumed at Cropredy ’Fairports Annual Reunion’ Festival, Cropredy, Oxon, Friday 8th August 2014 Pours orange amber, its quite hazy. The maltiness (crystal) is quite prominent, but the hops are quite pushy also, its just a little sweet. Soft in mouth, a little juicy with a bit of fruity caramel. Good. A6 A3 T7 P4 Ov14 3.4

On draft a darker dubbel at that. Smell is a little roasty. Seems to be ever so slightly tart on the uptake. First taste then morphs to a more bold stronger thing. However, remains civilized. possesses a few of the real old country dubbels thing. A bit warming going down the gullet but in never gets up and shouts 8% in yer face. Yeah, becomes just a little medicinal on the finish. Almost passes itself off as a weird euro dble.

2006 vintage keg at Black Squirrel. An interesting beast to be sure – it would have been interesting to try this eight years ago as well. Pours muddy dark brown with great head and lacing. Roast and smoked peat aroma in malt. Good head and lacing. Finishes with medium bitterness. Same aged taste in this as well. Light astringency. Very thick consistency. Good stuff.
