Description
In August of 2005, the first jack hammer went into the ground in the empty warehouse in Pleasantville, New York, that was to become the living dream of our founder Scott Vaccaro. We brewed our first batch of beer in December of 2005. In December of 2011 we moved to Elmsford, finished construction of our new brewery, brewed our first batch of beer, and slowly shut down our old location. In 2014 we decided that it was time, after 9 years of making sour and wild ales, to take it to the next level by opening our new sour ale production wing, lovingly dubbed the “Fermento Funk Facility”.

Can. A hazy one, golden in color and with a dense but minimalistic off-white head. Some lacing. Grapefruit, pineapple notes, pine cones, pale malts, some alcohol and a touch of bread and grass in the aroma. It's full-bodied and lightly warming, softly carbonated, semi-sweet, with a good bitterness to deal with the sugars. Pine cones, resin, grapefruit and some hints of tropical fruityness in the flavor. Pale malts in the back. Medium length finish. A bit sweet this one, but sure a fine brew, quite classic. 241019

I recall this being a purchase from Half Time. A pint can now opened and going inside of a snifter. Super dark brown in color completed by a small ring of tan foam. I lift the glass for a sniff and get chocolate, fruit and malt. The drink takes a big step up. Dark chocolate, cherries, malt, roast, pie crust and tootsie roll. Some bitterness at the conclusion and quite dense in the palate, both good. Good impy stout.

16 oz. can from Downtown Produce. Pours a very cloudy gold color with a very large ivory head and great retention. Fair lacing. Floaties present. Strong hops aroma. Hop forward flavor with some grapefruit notes and a soft bitter finish and a touch of booze. Not as juicy as I expected. Although this is an imperial hazy, it's mellower and less bitter than their Citra Dreams. Medium body and medium-light carbonation. Not getting any stone fruit or peach notes. Low to moderate soft bitterness comes through more as it warms. The 8.0% ABV is mostly hidden. Good muscle relaxer after pickleball.
