Description
St. Joseph's Abbey in Spencer, Massachusetts, is home to a community of Trappist monks and the first American Trappist brewery. Following the Benedictine tradition of ora et labora (prayer and work), the monks pursue a simple life of contemplative prayer, manual labor and hospitality. The brewery helps support the monks and their charitable outreach. The brewery, being far into the abbey's land, is not open to the public for tours or tastings.

Very rich malt complex on this one makes it a very drinkable IPA. Some mash peel aroma as well. Hazy golden pour with good head and lacing. Light bitter finish with note of tang. Tap at The Sovereign.

Bottle from Grocery Outlet. Cheap. This one is probably past it’s prime, but you wouldn’t know it as it still presents itself really well. It pours an orange gold color with a tall, fizzy off white head. The aroma has toasted malt, some fruity plum and banana with hints of clove spiciness. Almost seems like a hefeweizen with more complex fruity esters. The flavor has lots of dried fruit and clove. Pear, plum, a little baked apple, cinnamon and clove. It has a dense, yet frothy mouthfeel. High carbonation. Moderate earthy bitterness. Pretty nice. Very solid.

Small if persistent whitish rim over hazy, UFO-filled reddish-amber beer. Lavender and other ’Christmassy’ spices (cinnamon, clove,..) Spices. Spices. And more spices. Malts in the background. Medium bodied, good carbonation. Sticky spices keep harassing the oral cavity. GUYS! Follow some brewing courses @ your Belgian brethern!! Moderation is a Christian value, no?

Sample at Savor 2016. Dark brown color, tan head. Aroma of chocolate and leather. Taste is bitter espresso and cocoa. Nice.

Pours a slightly hazy pale straw into a pilsner. Bright white soapy head with medium retention recedes leaving trailing spiders. Cracker, sourdough, and wet hay aromas. Medium bodied with sourdough and grass upfront turning to bitter earth in the lasting finish.

4 oz bottle pour at Birch & Barley during the 5th annual SAVOR Brewers Brunch. Poured a hazy very dark brown color with a nice off white head. Aroma was some light fruity notes with a decent spice character. Herbal and slightly barnhouse character to this one. Dry plums.

4 oz bottle pour at Birch & Barley during the annual SAVOR Brewers Brunch. Slightly hazy golden brown with beige head. Aromas of dark fruit, plums, spice. Tastes of spice, herbs, plums. Medium body with a dry finish.

Bottle at SAVOR poured by Father Isaac Keeley, the Brewery Director. Poured a black color with a brown head. Aroma was lots of roasted malts, very mild coffee roast. BItter dark chocolate, earthy and herbal hop notes. Dark fruit is hiding in there, with a very tinge of tobacco smoke.

Bottle @ Studenter hus, Aarhus. Pours golden with an offwhite head. Aroma of malt, toasted bread, a bit yeasty, sweet ripe fruit, peach, ripe pear, melon, alcohol. Flavor is quite sweet, malty, bread, yeasty, ripe fruit, pear, melon, alcohol. Medium body, average carbonation, light sweet finish with a bit of alcohol. 040616

Bottle sample at Birch and Barley Brewers Brunch, poured by Father Isaac. Clear ruby amber color, tan head with good retention and solid lacing. Aroma of peppery and spiced funky caramel. Taste is boozy fruity spiced caramel. Interesting.
