Description
Al onze bieren worden bedacht in onze – hoe kan het ook anders – hoeve. Hier experimenteren we met veel gekende maar vaak ook enkele minder evidente ingrediënten tot we een uniek recept hebben dat helemaal aan onze wensen voldoet.
Één van ons neemt de lead en testbrouwt in onze proefinstallatie, om eventueel nog verder te finetunen tot we precies hebben wat we willen. Alleen als we zelf perfect tevreden zijn, wordt het verder gecommercialiseerd.
Omdat de onderzoeksfase helemaal ons ding is kunt u bij ons ook een bier op maat, speciaal voor u, uw bedrijf of vereniging laten maken. Vertel ons uw doel en we gaan samen aan de slag.

Bottle from Stacks. Hazy black, stable, small, foamy, beige head. Aroma of bourbon, liquorice, raisin, pear, mocha, fondant, dried banana, wet wood, vanilla. Taste has sweet pear, dried banana & fig in a dark-chocolatey, dark fudge-like malt body with a whiff of vanilla and some bitter liquorice. Herbal hops in the finish, soft coffee roast, dried fruits, warming bourbon alcohol and more retronasal vanilla. Medium body, oily texture, soft carbonation. The barrel treatment works well here, offering a drinkable Ale despite the considerable ABV, but this is indeed not an RIS.

Pale dirty golden pour from draft at ginger man. Very fruity nose. Taste is actually somewhat grape-ish which is odd to me. Ehhhh.

330mL bottle. Pours clear pale gold with a small white head. Spicy Belgian yeast, a touch citrus peel, and golden raisins on the nose. Flavour has a ton of golden raisins up front, spicy Belgian yeast, grapefruit peel, and a bitter, slightly metallic finish. Decent carbonation. Pretty decent, but not the best tripel.

Poured from 330mL bottle (pkg 12/2025 on cap). Hazy gold with full white head. Belgian yeast, fairly light and airy, light background spices, pepper, decent.

Bottle from The Gull, North Vancouver; bb Nov 2025, probably 9 months old; 8.7% ABV
Blond colour, bright, with some haze; it's well carbonated, producing a large, creamy, and lasting head. The aroma is a consequence of the Belgian yeast, it's spicy, without the American bubblegum nonsense (sorry for mentioning 'American' when talking of a pure Belgian beer). The mouthfeel is fairly dry; the base is a bit too wheat-y, I wonder what it could have been with a pure barley base; the spice is strong (coriander and pepper, classic); a bit too bitter in the finish.
A bit rough, but enjoyable.

330 ml bottle. Pours a dull amber with little head. Aromas of fruity banana, leather, candied citrus and bready malts. Flavors of bitter citrus, earthy esters, dried stoned fruit and toasted malts. Bitter finish.

330 ml bottle. Pours amber with light head. Aromas of fried banana, a bit of cloves, honey and dry wheaty malts. Flavors follow same though more earthy and herbal. Clean. Nice enough.

330mL bottle, pours a hazy golden orange with a large white head. Aroma brings out some spicy Belgian yeast, orange zest, a little cotton candy, a touch of metallic notes, and doughy malt. Flavour has a decent spicy yeast profile, light phenolic character, some orange zest, doughy malt, bready notes, and light metallic notes again. Decent yeast profile, with good assertive carb, but doesn't shine quite like the elite tripels out there. Solid though.

330mL bottle, pours a hazy dull golden orange with a medium white head. Aroma is fragrant, with lots of spicy Belgian yeast, some gentle cotton candy, doughy malt, and very minimal esters — seems very carefully balanced. Flavour is much the same, with lots of spicy Belgian yeast, doughy malt, ever so slight residual sweetness, and a touch of desirable phenolic notes. Balanced, spicy finish. Great yeast profile. Very good.
