500mL bottle, pours a clear golden with a small white head. Aroma is loaded with intense basil and tomato upfront—like a marinara pizza—plus a touch of funk. Flavour is very tangy, with tangy tomato, intense herbal notes from the basil, and a hint of funk. The funk is way subdued beneath the tomato and basil. Not my thing but it's an eccentric, strange mix of shit.

(750ml bottle shared by Quentin, thanks!) Pours clear purple-red with a small pink-white ring and no lace. Aroma is very aronia-forward, that tart and lightly sweet, vaguely cherry-meets-cranberry in red wine character, nice fresh mint, dusty funk, earthy, softly funky in a way that lets the adjuncts shine. Flavour is lightly sweet, very lightly acidic, and fairly dry overall. The mint is quite prominent but the red wine-like quality of the aronia is not overpowered, with some dark cherry and forest berry, moderate tannins, soft earthiness, restrained funk, acidity is quite light (lactic), finishes very dry with earthy Brett, tannic aronia, fresh mint sparkling nicely all over the depth of the berry in a very pleaseant way. Light to medium body, grippy, smooth fine carbonation. The match of the aronia and mint is surprising and inspired, really elevating the confounding characteristics of the former. The spontaneous base is 'calm' but supports nicely.

(750ml bottle shared by Quentin, thanks!) Pours a slightly orange-tinged medium red with a decent whitish head and light lace. Aroma is nicely cameriese-forward (earthy red berry) matched by lactic acid, earthy Brett, lightly vegetal quality like rhubarb, soft to moderate barrel. Flavour is moderately tart, camerise as expected (red berry, earthy, moderate tannins), principally lactic acid with a little berry tartness too, softly lemony, fairly light earthy Brett with a touch of funk, drying towards the finish with slightly astringent camerise, drying wood, light leather and earth, fruity and slightly wine-like in the aftertaste. Light body, smooth soft bottle-conditioned carbonation. Perhaps not the most complex B&S since it's resting entirely on camerise and yeast, but the quality of the former is excellent and well-supported by the latter.

(On tap @ the brewery, Sep 8/23) Pours clear bright gold with a decent stable white head and good lace. Grisette-style wild, cereal base is fairly light, not-quite-crackery with a little sweetness, fairly lactic but not overly citrusy/yoghurty, flora tends a bit earthy and mixes with the red fruit, soft vanilla and leather from the wine barrel, no acetic component here, dry but not heavily mineral on the finish, a little fruity into the aftertaste with good barrel presence and some lingering earthy funk. Light-bodied, touch slick, smooth fine carbonation. Less of a mineral crispness than the grisettes from Auval tend to have, more mellow and barrel-driven, but equally in the lane of complex but refreshing lower ABV wilds.

(750ml bottle @ Restaurant Maison Black Whale par Nath & Co., Percé, QC, Sep 8/23) Clear medium pinkish-gold pour with a huge white head and spotty lace. Wasn't 100% my best sensorily at this point so my notes are limited, but it was a nice funky/lactic cider with a pear-type florality, a bit earthy but the beets were not really noticeable, a little grounding from the beer component, dry and a bit tart all the way through the finish. Light to medium body, very fine moderate carb. Very fun stuff from what I could tell, wish I had been in a better shape to enjoy it more thoroughly.

(750ml bottle @ the brewery, Sep 8/23) Pours clear amber with a decent white head that fades to a ring with spotty lace. Aroma is tart, funky and herbal, ripe cranberries nicely present, some nice tart apple/pear as well, rosemary is quite prominent but well-integrated with a lambic-like flora (moreso than their pure spontaneous beers to me so far), no old hops in here I suppose but the herbal quality somewhat mimics a bit of their quality. Flavour follows the nose, lightly to moderately tart with a hint of sweetness as well thanks to the ripe cranberries, mixed tree fruit backing notes, soft cereal character, funk is lambic-style in its profile, lactic acid with dashes of acetic too, rosemary initially subtle but emerges out of the funk in the middle of the sip to become a more dominant note. The seam of acidity persists into a drying finish, hay and a little tannin helping with the drydown, good smooth funk, rosemary into the aftertaste. Medium-bodied, touch slick and oily, smooth filling bottle-conditioned carbonation. Wow, a very unexpected concept but the idea was excellent and the execution talented. Superb creative wild ale.

deep ruby red color. Big spruce with raspberry, funk. Very tart, amazing spruce, a touch of honey funky Belgian yeast. Amazing depth. Every component just shines. Fucking amazing
