Aromes fermiers et chevalins intenses.
Léger fruité de poire.
De couleur ambré et limpide, le liquide se couvre d’une mousse assez épaisse qui disparait rapidement.
Entrée de bouche fermière et chevaline avec des notes de poire en sourdine.
Environnement floral, touche de boisé et petite base miellée également présents.
J’aurais préféré un léger rehaussement des adjuvants pour assurer un meilleur équilibre par rapport à l’intensité fermière et sauvage.
Appréciée cependant !

[2022? Vintage] 750mL bottle. Pours clear blonde, murky once the sediment is added. Nose has notes of old wood, must, wet leather. Flavour is lightly acidic with old wood, some leather; very musty. Losing a bit of it's carbonation at this point. Complexity and mustiness deepen as it opens up. Solid gueuze-style.

Aroma: funky, some minerals, noticeable oak, notes.
Taste: along the same lines, moderate carbonation, oaky, some fruity notes (kinda apples?).
Overall: clean, crispy, quality, but still lacks that nice funky aggressiveness component.

Poured from 750mL bottle (thanks Derek & JF). Clear gold with very minimal white head. Nice funk with gentle tartness and minerality, a touch on the thinner side and could use some more carbonation (I did sit on this for about a year), but has some nice flavours, decent North American attempt at a Lambic.

Bottle: Poured a cloudy beige color ale with a medium size foamy head with limited retention and light lacing. Aroma of tart notes with some oak and funky esther mix with some dune pepper and flowery notes. Taste is also a mix of dune pepper, flowery notes with some oak and oak features and a tart finish with no acidity. Body is about average with good carbonation. Enjoyable wild ale with nice complexity due to dune paper and other flowery ingredients.

Dull and hazy. No head. It foamed up upon opening, but otherwise it's aroma of basil, ginger, lime. On the palate, it's got mostly the herbal notes, the lime, and a fair bit of wildness. Light body with high carbonation, so it's on the refreshing side. I guess I can imagine some tomato here.

Poured from 750mL bottle (thanks Derek & JF; 2024 vintage). Gushed a bit on opening. Chill hazed blonde with quickly dissipating white head. Basil aroma permeates the room on opening. Mild sour with feint tomato and nice underlying basil character, feint hint of mint. Prefer this more than V.2. Decent.

Bottle: Poured a golden color ale with a medium size white foamy head with good retention and minor lacing. Aroma of funky ester with some Brett notes, some haskap notes with resinous notes and light tart notes. Taste is also a mix of funky ester with some brett notes, some haskap and resinous spiced notes with light tart notes with some oak presence also noticeable. Body is about average with good carbonation. Enjoyable wild ale with a nice level of complexity and the haskap bring good flavors.

Taste is also a mix of funky ester with some brett notes, some Borela spice notes with light tart notes with some oak presence also noticeable. Body is about average with good carbonation. Enjoyable wild ale with a nice level of complexity and the nice Boreal flavors.

Taste is also a mix of funky ester with some brett notes, some lightly sweet muscat grape notes with light tart notes with some oak presence also noticeable. Body is about average with good carbonation. Enjoyable wild ale with a nice level of complexity and the grapes add a ton of flavors.
