Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Bottle shared at craft clerko. Many thanks to Bruce. Dark mahogany brown / caramel coloured pour with a fleeting loose tan head. Aroma is nutty, little solvent, fink, dusty, light dark fruit note. Flavour is composed of, tart sharp grapefruit, citric acid, quite puckering. Little hint of vinegar. Palate is semi sweet and sour, tart, puckering finish. Interesting nutty and dark fruit lingering.

Bottle shared in London - many thanks to Bruce. Pours clear brown with a frothy tan head. Nice leathery fruits in the nose with accents of earth and dried berries. Medium sweet flavor, lightly acetic, with notes of grape, cocoa, plum. Medium bodied with average, spritzy carbonation. Lightly warming on the finish with assertive acidity, some toasted grains, wood, earth. Nicely nuanced.

Bottle thanks to Bruce. It pours dark brown with a decent beige head. The nose is lactic, sour, wood, earthy roast, pepper, berry, creamy, green apple and jam. The taste is tart, tangy, lactic, earth, toast, very light coffee, must, sour cola, light roast, wood, orange marmalade, jammy berry, pepper and quite a bit of acidity with a dry, woody finish. Medium body and moderate carbonation. A touch acidic perhaps, but quaffable enough.

Where the Wild Beers Are, 2014. Very good. P think there is brett and lacto yeast. This is dry, earthy, and a little sour. Gold color, well carbonated. Excellent saison.

Draft. Amber beer with a cream head. Tart and apricot pie aroma. Acetic notes and sour flavor with light apricots. Medium bodied. Sour and acetic notes linger with apricot, light lemon, and light oak.

Draft. Hazy amber beer with a cream head. Light grapefruit aroma. Grapefruit and light sweet malt flavor with light summer fruit. Medium bodied. Grapefruit and light sweet malt linger with light summer fruit.

Bottle shared by Adam, thanks! Pours deep brown with a bit of a ruby hue and a light brown head that dissipates to the edges. Aroma has deep raspberry that is slightly tart with some dark bread notes. Flavor has sour raspberry with a bit of dark bread and a light earthiness.

Bottle shared by Adam, thanks! Pours a clear light earthy yellow and a white head that dissipates to the edges. Aroma has a good amount of sweet spent grain and light barrel with a bit of underlying light fruits. Flavor combines lightly tart fruits with some sweet grains with a wine barrel adding a bit of dryness. Kind of Fantome like.

On tap at the brewery. Aroma is moderately roast forward with a hint of smoke and light milk chocolate. Medium light dark fruit notes. Nice roastiness. Pours black with a small, moderately thick, mocha head that steadily recedes to the edges where it lingers. Medium light lacing and small legs. Flavor has a medium light sweetness with some nice milk chocolate notes upfront. Moderately strong roast notes with hints of smoke and ash. Medium bitterness. Light dark fruit notes. Mouthfeel is medium bodied with medium low carbonation. Low astringency and low alcohol warmth. Overall, my favorite stouts from SARA so far. Really nice malt character with hints of dark fruit. Balanced sweetness.

On tap at the brewery. Aroma is slightly acidic and citrus. Moderate phenolic notes with coriander. A bit poopy with a light graininess. Pours a cloudy, pale yellow with a large, white head with decent retention as it recedes to the edges. No leaving and small legs. Flavor is moderately tart with a light grain note. Hints of overripe stone fruit and faint tropical fruit. Medium light bitterness. Moderate phenolic not, slightly plastic. Light saltiness. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, nice acidity and citrus note with good salt, but the phenolics from the yeast is a bit off.
