The brewery has always pushed itself to brew interesting beers, under the very deliberate constraint of doing so without the use of animal products. In turn, this caused Brass Castle to develop a house yeast strain and specialised processes that could guarantee the final product. From December 2017, every beer brewed at Brass Castle has been based on a gluten-free beer recipes – on the basis that beer should be made available to as many people as possible. Most recently, the brewery invested in canning line and carbonation tanks, to spread the beers further than they have gone before.

Cask at The York Tap. Pours clear pale gold, thin white head. Aromas of tropical fruit, citrus, some pine. Taste is bitter, good balancing sweetness. Grapefruit bitter linger. Nice.

Keg @ Friends of Ham. Pours hazy yellow. A decent wit with bright wheat flavours, subtle farmhouse yeast and a moreish fruitiness with lemon and banana esters and a touch of spice. Very nice.

Chelmsford Summer Beer Fest. Cask. Lightly hazy amber beer. Few pale cream colour bubbles trying to be a head. Palate is light, smooth and semi dry. Not much carbonation. Sweetish caramel malts with a touch of strawberry led berry fruits. Touches of malt cream and esters. Light dry finish. Weird lager. Not at all unpleasant but definitely a little strange.

Cask at Maidenhead beer festival 2014. A black coloured pour with virtually no head to speak of. Smokey, malty aroma. Tastes smokey, malty, slightly roasty with a hint of coffee in there too.

Opaque dark brown beer, small pale tan head. Palate is smooth and dry with fine carbonation. Smooth tangy dark malts, light tang. Brief creamy malt burst. Mild vanilla. Mild coffee. Whisper of dark fruits. Light finish. Pretty good.
