Like e.g. Musketeers' Bucketlist series, Rolling Hills - still lingering in my memory as Pêtre Devos - now has a series of 'experimental' one-offs, of which this milkshake IPA seems to be the third so far. Off-white, moussey, rather large-bubbled, medium thick head diminishing into a thin ring of bubbles over a misty warm golden robe with ochre-ish tinge. Aroma of dried orange zest, unripe melon, banana peel, bread soaked in milk, soggy crackers, overripe cucumber, old dried lemon peel, something very vaguely buttermilk-like but not in the diacetyl sense of the word (rather spoiled dairy), grass, background touches of dry cider, old potatoes, 'acidic' water (as from a fen), cheese rind. Spritzy onset - which a milkshake IPA should not have - carrying a lot of stingy carbonation distracting from the flavours, which include a sweetish banana ester effect mingled with red apple, peach and pineapple, moving into a lean cereally pale malt body with cracker-like edges. The lactose sits on top, as a thin but noticeable effect of fruit porridge (think baby's food), but the overcarbonation prevents it from effectuating its creaminess and the sweetness, though present, remains a bit understated for a milkshake IPA. This 'sweet dairy' accent continues into the finish along with the malts and very mildly bittering, floral hops, which show flashes of citrusiness and even something melon-coloured here and there. Some of the sweetness lingers in the end, combining with the citrusy side of the hops into something almost orange juice-like, but subtly so. Everything gently but quickly fades after that. Puzzling - as usual, a local and average Belgian brewery well versed in traditional Belgian brewing attempts an international IPA variant but hilariously misses the point; this is, if anything, a Belgian 'IPA' (in the broadest sense of the word) with lactose added to it. Considering that "Belgian IPA" in general often comes down to a blonde (or tripel) with 'more hops' added to it, one can imagine how far we are removed from a true milkshake IPA here - even from the originals created with fruit and vanilla by Omnipollo ten years ago, when the genre - yes, it has become a genre whether we like it or not - saw the light of day. Maybe someone should have offered a few real milkshake IPAs to this Eddie, and should have explained to him that the idea really is to convey a milkshake look, feel and flavour... Throwing lactose in something which is barely a true IPA to begin with, will not get you anywhere of course - but of course very few Belgian brewers even attempted this style so far (less than a dozen have been created in this country) and unless I am forgetting something important here, none have done it really successfully. Point off for throwing dropping the ball entirely in terms of style intentions, but then this beer was not unpleasant to drink either, so I will be lenient.

Goudgeel bier met mooi stevig schuim. Smaak is bitterzoet en licht kruidig met iets van sinaasappel, nootmuskaat, wat banaan en wat gras. Heel goed.

Donker roodbruin bier met weinig schuim. Smaak is licht zuur fruitig met duidelijk iets van rode wijn, wat kersen en rode bessen. Heeft een prettig mondgevoel, niet te zuur, niet te zoet. Hoewel niet echt mijn favoriete stijl kan ik deze wel waarderen.

On tap at Brugge BF. Hazy orange gold colour lasting white head. Some decent candied fruits. Tangerine and grapefruit flavours. Some sweetness. Some decent hop on the end. A very fruity delicious tripel. Good tangerine notes.

Lichtbruin troebel bier zonder schuim. Smaak is bitterzoet en licht fruitig met iets van mandarijn, wat peer en hop. Heeft een heel lange alcoholische afdronk.

Cold coffee, earth, toast, old fondant. Sweetish brambleberry, bitter coffee, nuts. Earthy hops, toast, ash. Medium body. Where ABV? Not too bad but it certainly didn't stand out.

Rolling Hills volgens het etiket, echter wel zelfde ABV. Troebel goudgeel bier met weinig schuim. Smaak is redelijk bitter hoppig met een wat zoete fruitig bijsmaak. Best een goed bier.

Eddie's Lab imperial waffle stout is een product van brouwerij Rolling Hills uit Oudenaarde. Het is het verhaal van de broers Karel, Edward en Antoon Vandermeersch, Karel die reeds geïnteresseerd was op jonge leeftijd, roerde en brouwde wat in de potten in moeders keuken en bracht Edward op het idee om een thuisbrouwerij op te richten. Een omweg langs bierfirma Petre Devos zorgde voor het ambitieuze plan om een eigen brouwerij te bouwen. Deze kwam er in 2020 en werd gedoopt tot Brouwcompagnie Rolling Hills, een ode aan de heuvels van de Vlaamse Ardennen en op de manier waarop ze bier brouwen: een oude ziel met een frisse kijk.
EDDIE'S LAB IMPERIAL WAFFLE STOUT is een helder zwart bier dat maar weinig bruin schuim aanmaakt in een gelijkmatige vorm met wat ongelijkmatige belletjes tussen. Het blijft wel sterk aan je glaswand kleven maar zakt daarna in elkaar tot een fijn dun laagje dat wat later bijna helemaal verdwijnt. Op de bodem van de fles zie je nog een gistdepot. CO2 belletjes zie je niet wegens te zwart bier.
HET AROMA:
Zoetig, stroperig, karamel, gistbittertje, zeer rijpe banaan, chocolade, beetje gebrand, mout, hout en een alcoholtint.
DE SMAAK:
Zoetig, stroperig, karamel, zeer rijpe banaan, beetje gebrand, mout, hout, espresso tint.
HET MONDGEVOEL:
Volle body en een romige textuur, platte koolzuurgas-ervaring toch.
DE NASMAAK:
Karamel, zeer rijpe banaan, wat gebrand, mout, hout, licht alcoholisch, likeur en espresso. Je ervaart de Belgische wafels even in de nadronk maar de espresso en het bittere vloeien lang uit.
HET TOTAALGEVOEL:
Een zeer complex bier.
HET VERDICT:
Zeer lekkere wafel stout, moet je geproefd hebben. Heel veel aroma’s en smaken. De wafels blijven wel op de achtergrond maar de espresso en ook de alcohol maken veel goed.

Wilde Bottleshare 16 juli 2025. Kleur is bruin. Kleine beige schuimkraag. Aroma is zoetig, funky, fruitig, iets brett. In de mond zurig en funky. Smaak is vrij zuur met een vleugje zoetig. Stevig alcohol gevoel, warmend. Tamelijk volle body.

Pours black, tanned, fairly small head with low average stability. Scent is pastry, but not overly intense (for the style). vanilla, roasty, loads of cloves, which build up more and more. Taste is full, cloves-forward (overruling, even). Vanilla, some chocolate, roasty. Medium body (thin for the style). Not overly sweet, it's more balanced than expected. Not a fan of the cloves (at all), and still think this isn't intense or thick enough - but in terms of bitter vs sweet, this one does a good job. Unfortunately, that isn't enough to surpass the totallity of the beer.
