Description
Quasi 100 anni fa il Dada è stata un'avanguardia artistica che si prefiggeva, col suo spirito sarcastico, stravagante e a volte irrispettoso, di distruggere le convenzioni dell'epoca.
Oggi Dada è anche un Birrificio, e noi vogliamo, con lo stesso spirito libero, giovane e dinamico, tagliare con questo presente troppo frenetico e standardizzato.
Dal punto di vista produttivo eliminando ogni forma recente di conservante e additivo, ed omettendo i processi di filtrazione e pastorizzazione imposti alla birra che hanno portato ad un appiattimento dei sapori e dei profumi.
Per la distribuzione proponiamo un ritorno al passato, dove le abilità personali ed i valori umani tornino a contare negli scambi commerciali.
Noi vogliamo ricreare un modo di fare, vendere e degustare birra più sano, sobrio e meno convenzionale.
Noi siamo Dada a modo nostro e non facciamo solo birra,
facciamo Arte Birraria Moderna.

Draught @ [ Birre Sotte L’Albero 2012 ]@ Bir&Fud, Via Benedetta 23, Roma, Italy 00153.Unclear - hazy medium orange colour with a average, frothy to creamy, good lacing, fully lasting, off-white head. Aroma is moderate malty, caramel, light to moderate hoppy, sharp, moderate to heavy yeasty, fruity, yeast. Flavour is moderate to heavy sweet and bitter with a long duration. Body is medium, texture is oily, carbonation is soft. [20121216]

Draught @ GEIB, Grande Esposizione Italiane della Birra 2012, Nuova Fiera di Roma, via Portuense 1645, Rome, Italy 00100. [ As Birrificio Dada Chester Brown Ale ].ABV: 5.0%. Clear dark brown colour with a average, frothy, good lacing, mostly lasting, off-white to beige head. Aroma is moderate malty, caramel, light roasted, nutty notes. Flavour is moderate sweet and bitter with a long duration, roasted, chocolate malt, light anis seed - licorice. Body is medium, texture is oily, carbonation is soft. [20121214]

Bottle from Birratrovo, Como
Hazy dark brown color; medium sized creamy head. Some aroma of roasted malt, roasted nuts, maybe coffee; nice. Too much carbonation highlights how there is some fermentation problem; roasted malt flavor, too much yeast presence; strong bitterness, some coming from the roasted malts, and light sourness.
Too roasty, and with some problems.

Bottle from Birratrovo, Como
Cloudy deep blond color, small head. Very nice aroma, hops, citrus fruits, earthy, preserved lemons. Light and smooth mouthfeel; grassy and lemony touch, with dry final, and correct bitterness.
Elegant and satisfying.

Bottle sample at a tasting at kerenmk’s place. Thanks troubles. Very dark brown to black with a beige head. Roasty aroma with light acidic hints and a bit of coffee. Roasty flavor with light sweetness, light acidic notes and some coffee. Medium-bodied.

50 cL bottle. Pours hazy brown with a huge tan head. Aroma is dry roasted malty and caramelish. Bitter, caramelish and toasted malty. Smooth caramelish and toasted. Bitter and dark roasted finish.

Bottle from Birratrovo, Como
Golden color; medium sized head, compact. The aroma is hoppy, grassy, with a faint trace of citrus fruit. Good malt flavor, with powerful bitterness, strong hop resins, very light fruity character, but also a mild residual sweetness that helps the whole. Long final.
Cohesive blend, pleasant.

Too much carbonation and huge head, sign of excessive bottle fermentation. The aroma indeed shows a ot of cabbage and vegetables, uninviting. The flavor confirms that there has been a refermentation in the bottle, producing unbearable scent of cabbage and vegetables, and too much yeast and bitterness in the end.
Undrinkable.
