Description
Cidermaking is a playground of the pretty and the ugly, the bitter and the sweet: It’s never a one-note song when done well. Our apples reflect the striking, complex terroir of Washington’s apple country — from juicy dessert fruit to biting, spirited cider varieties. Simply put, apples contain contradictions. And it’s when we follow their every wild and quiet possibility, and seek out juxtapositions of flavor, that we find our most delicious end result.

On tap at Bale Breaker / Yonder, pours a clear blonde with a small white head. Aroma brings out semi-sweet apple skins and a touch of wildness. Flavour has some nice apple skins, light wildness, and light apple core. Simple but very well-made.

Sampled from the tap at the Ballard location. Pours a clear deep gold with a white head that dissipates quickly to the edges. Aroma has sweet and earthy apple with a hint of bitterness. Flavor has earthy dry apple but a bit of an acidic and sweet bite in the finish.

Deep gold and bright. No head. Rich apples, lots of bourbon over top, adding to the richness. Sweet but a hint of tannins. Quite nice.

Burnished amber, earthy apple, bright, a bit soupy…ok this isn’t my fave cider apple, comes across quite sweet (french!) and mild.

Taster shared with Matt. Appearance: clear golden with a white head. Aroma: sweet and dry apples, some apples seeds. Taste: very dry, lots of tannins. Overall: definitely close to French ciders in terms of the dryness, ok.

Taster shared with Matt. Appearance: clear copper with a white head. Aroma: smells like Sangria. Taste: well, there is not much apples, but lots of cranberries and oranges. There's is also herbal ish bitterness that's probably coming from tannins. Overall: they definitely nailed it.

Taster shared with Matt. Appearance: clear pale rose color with no head. Aroma: nice sweet and a bit acidic apple character. Taste: along the same lines, quite dry, but lots of apples, dry aftertaste, moderately acidic, a bit tanic. Overall: very nice.
