Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Batch 2, 2025. Clear gold, an inch of white head that lasts well (second glass is murky). Saison-like mild funk and citrusy hops, floral notes, hay. Light bodied, fizzy. Dryish with orange, lemon and lie peel, hints of apricot stones, hayish crackers, moderate floral and grass-tinged bitterness. A touch of light Australian honey at the end too. Only influenced by Kvass in the sense it's got leftover bread in it. Started at 11C, will drink the second glass colder. Very nice; the light touch is rewarded.

Bottle shared at the craft beer junction bermondsey tasting. Many thanks. A clear reddy coloured pour with a halo of white head. Aroma is sour, green apple, brown sugars, mellow earthy sour, prickly,. Flavour is composed of semi sweet watermelon, sour, tangy, earthy, watermloon. Tangy. Palate is tangy, mellow carbonation.

Clear brownish colour with small head.Aroma of tart grapes and wood mild tart and sour with good notes of lactose and wood sweet and sour with mild finish.

Excellent tart cherry nose with good funkiness. The cherry character has subsided and become much more drier. Very nice but think fresher the better

Very funky tons of muscat, lemon, beautiful sweetness, nice oxidation character , wow. Amazing nose. The palate is tart, low carbonation, funky as hell with a touch of oak, the grapes shine the oxidation shines, and . This amazing. I love this

Cloudy golden color. Tons of grape character. Nice tannins citrusy fruit character. Oxidization is not nearly as apparent as 2023. Very fresh and vibrant but prefer the first year

Dried apricots, citrus notes, slight tart nose. Tart light body. Very dry. Big funky yeasty and nice grape skin character. It’s very unique. Nice stuff

Super cloudy golden color. No head. Modestly tart nose with decent nectarine and butric acid character. Modestly tart palate but the fruit character is slightly dull and the palate is just kinda meh. Real lack of sweetness for this year

Very carbonated citrusy, lemons, medium heavy body, medium bitterness. Good oak character very refreshing. Yeasty. Easy drinking. Kinda like a complexing version of Coopers ale. Nice
