Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Panda from danlo, thanks Ed! Pours hazed yellow gold with no head. Aroma: dry apple, straw, mild funk. Taste: light tart, dry apple, fruity, funky, mid tannins, drying finish. Medium body with light carbonation.

750ml bottle from Hop Knocker. Reddish dark amber brown colour, bubbly white foamy head and aroma of sour fruits, citric rind, funk. Taste is tart, sour fruity, citrusy lemon rind, some malt, woody oak, and funky, acetic, lactic, salty with some bitterness. Medium bodied, soft carbonation, drying soured finish. Nicely drinkable.

750ml bottle from Hop Knocker. Golden colour, white foam head leaving lacing and aroma of fruit, citric rind, funk. Taste is sour, grain, fruity, citrusy, lemon rind, wood, with funky notes and some bitterness. Medium bodied, soft carbonation, dry soured finish. Nicely drinkable.
