Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Light cloudy purple color. Which seems a bit odd for a muscat Ba beer. Semi sweet muscat character with light oak barrel and tart nose. Very carbonated. Semi sweet but the fruit doesn’t shine. Good but not amazing

Lots of lemon, oak, and big yeasty notes. A more Sophia version of Coopers but can hardly tell the difference with Dleta. Modest bitterness. Dry. Good but not amazing

Light golden color. Frothy white head. Lovely nose of sweet resiling grapes, oak, funky yeast. Modestly tart medium heavy palate.

Light purple amber color. Big Japanese plum (ume) salty nose with cherry blossom yeast (sakura mochi). Very tart. Low carbonation very dry and unique. Lingering ume with a touch of mushroom character Wow. I like this.

Dry. Decent white peach character, sour but but fruit sweetness wasn’t quit there. Still I enjoyed it a lot

Deep golden color. No head. Green apple, Oak, slightly funky barnyard nose. Low medium carbonation. Very tart and very yeasty. Found the palate a bit simple. It’s balanced though. This could develop into something interesting but right now it’s just good

Cloudy white golden. Lots of peach like character which must comes from the grapes, underlying sweetness with light tartness, light body, and some citrus notes. Very drinkable though not overly complex. Could use a bit more carbonation

On tap at Taphouse CPH, pours a clear amber, tiny head. Aroma has plenty of fermented out honey, some thorny berries, and a touch bugs. Flavour has moderately fermented out honey, some spices twig-like things, gentle bugs, and with some dry jammy berries. Fairly complex, finishing with honey, bugs, and earthy twigs. Good stuff.

On tap at Taphouse CPH. Pours clear gold with a white head. Floral, earthy nose with honeycombs. Flavour has earthy yeast, mild tartness, gentle honeycomb sweetness. Well-done.
