Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Keg at Ms.Hammer Taproom, Beijing. Hazy golden. Tart, funky nose with sour apricots. Citric with medium body and rounded mouthfeel. Lactic sourness, faint horseblanket funk, sour apricots. Mild stale hop bitterness. Elegant and mellow.

Cloudy dark purple beer, small creamy pink purple head, little stable, non adhesive. Aroma: all lavender, timber, spicy, sourish impression. MF: ok carbon, medium to light body. Taste: pretty sourish start, a bit lemony, very floral, thyme, funky, wild. Aftertaste: still very floral, a bit fruity, thyme, juicy, dry finish, nice, but a little weird?

Tap at Billies. Hazy light ruby. Funky, sweet and sour grapes, strawberries, light funk, oak, grape skins. Super fruity! Medium sweet and sour. Good!

Sampled at Billies. Hazy purple. Lavender, sweet grapes, dry grape skin tannins, light funk. Medium sweet, sour and bitter. Full bodied. Quite tasty. Like a herbal wine.

2025 Ed. 5.8% ABV Deep red with no head nor carbonation. Rich vinous nose with berries that are clearly blueberry. Hint at lactic acid and fruitacids. Sweet-sour dark berries' flavour. Vinous with a lot of acids. Acidthinning, light -burn. Low carbonation but refreshing all the same. Nice! Kangaroo blueberries, go figure (OK, Tasmania isn't exactly the Outback)!
