But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Shared with Farees. Appearance: murky straw with a white head. Aroma: nice funk, bold, some minerals. Reminds lambics for sure. Taste: not as good as aroma, quite bitter (from Brett and/or hops?), still bold, but not as complex. Overall: ok. Good try, but requires some work for sure.

Grape lambic created for the tenth anniversary of the lauded De Garde brewery in California, specializing in spontaneous fermentation (and doing great things with it); thanks to Gaëtan for sharing at the Lambik-O-Droom during the ‘Bespelingen van het Lot’ event. Medium sized, moussey, opening, pale fuchsia-pink head on a misty deep ruby-red beer with vermillion glow. Aroma of loads of fresh blue grapes in a very fruity, even candied kind of way, with hints of candied cherries next to actual grapes, grape juice from a bottle, ripe nectarine, pitaya, mandarin, rosé wine, almond, roses, grape seed oil, swimming pool, damp earth, sourdough, touch chlorine. Very fruity, juicy onset, tart of course with astringent grape skin effects but also a very fleshy deep-purple grape core, again so dense and fruity that candied cherry springs to mind, as do red apple, pomegranate and nectarine; medium carb, rounded body, drying yoghurty lactic acidity pushing through a bready core, enhancing the dryness and tannic effects of grape seeds and skinds as well as the underlying minerality of the clay amphoras this beer was matured in. Unexpectedly, in the finish the whole flavour makes a U-turn towards a severe, orange pith- and wormwood-like bitterness that fills the back of the mouth, pushing away all that delicate fruitiness and tartness that was built up until that moment; I never saw this amount of hop bitterness coming and even though it is both completely unexpected and uncommon in a beer like this, I must admit that it was not an unpleasant surprise. Sweet nose, sour onset and bitter finish: there is a lot happening in this odd and fascinating but tasty ‘AmLam’ beer – for me it works.

A clear burgundy red ale with a thin light rosey head. In aroma, sweet fruity cherry, light lactic notes, Brett, horseblanket, Epsom salts, very nice and complex. In mouth, a nice sweet fruity mix of tart cherries, lactic acid, Epsom salts, light horseblanket, cherry certs, very nice. On tap at The Farmhouse, btv.
