But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Bottle to tulip.
Appearance: ruddy burnt orange/almost amber with a quickly dissipating fizzy head, no lace
Aroma: tons of juicy nectarines, sour and tart, flesh and skin then a lil bit of vinous activity with woody and clean grassy notes
Flavor: sour and tart initially then opens up with a lil bit of sweetness trying to balance the more I sip, subtle quick nectarine aftertaste
Texture: light to medium bodied, this is a sipping beer (no sessionability whatsoever but that's okay, I get it), quick nectarine fleshy tart finish
Overall: an extremely nicely done nectarine sour ale more than worthy of coming back to if I could find again.

Appearance: slick ruddy orange with a quickly dissipating fizzy head, no lace
Aroma: peach flesh, peach skin blending into sweet, tart and sour intricacies
Flavor: sweet, tart and sour through the prior mentioned aromas; some acidity, super quick tart peach aftertaste
Texture: light to medium bodied, this is a sipper all the way mainly because of the heavy acidity hitting my tongue, semi-sour/tart peachy finish
Overall: I'd say a very nice peach sour ale well worthy of having again.

On tap at Ridgewood, pours a cloudy orange with a small white head. Aroma has tons of wild yeast, oak, and orange zest in good cohesion. Flavour has plenty of floral dry hops, light phenols, oak, and plenty of bugs. Comes together reasonably well, but hoppy sours are not usually my thing. Good.

Bottle from Tavour: pours lightly orange hazy with fizzy white head. Aroma is funky, citrusy, very hoppy. Sweetish, lightly funked and sour. Some earthiness and minerals. Very pleasant.

Bottle. Pours hazy yellow, large white head, dissipates quickly, decent lacing. Aroma is hay, horse blanket, hops, lemon. Flavor is light tart, medium funk, bright hops. Medium body.

Bottle pour at the DCBeer December 2025 share. Poured a reddish color with a very slightly off-white head. Aroma was cherry skin, raspberry juice. Big tartness, funky yeast. Delicate, but not overly delicate. Tart, but not overly sour. Really nice.

Bottle shared by Jeff, thanks! Pours a clear gold with a yellow hue and a white head that dissipates quickly to the edges. Aroma has tart peach with a hint of funk and an oakiness backing. Flavor has sour peach with light funk, a bit of acid and an oaky backbone.

750mL bottled 2025, drunk 11/20/25, as pictured.
Juicy mix of orange zest, lightly woody amarillo and playful, round, very fruity culture. Light oak. Some acidity to keep it honest, but doesn't smell very strongly acidic.
Tart and lightly juicy with low acidity as the nose suggested. There's a big vanilla character; not sure where it's coming from, but it seems almost impossible that it isn't from vanilla bean used somewhere (previous beer in some of the barrel stock?). Juicy mixed culture acidity and fruitiness melds nicely with the orange zest and there's good attenuation. A levity of body, dry, but not too much so. Really nice one in the vein of their goses, not so much their more acidic, oakier stuff.
