But wait... what does that mean?
First off, we do not add laboratory cultured yeast to ferment our beer. We simply cool the wort naturally in a coolship. Amazing yeast & microflora are all around us! That's why we're in Tillamook!
After the wort cools, we transfer everything to oak barrels (some big, some small, some medium). Each beer takes it's own time in barrels to finish fermenting.
Most of our beers take anywhere from 6 months to 5+ years in barrels before we package them.
Every bottle is naturally conditioned and ready to be enjoyed when we release it. Although the beer can age, please note the fruit and hop additions will dissipate with extended time.

Clear deep bronze-golden. Small, white head.
Bit mousey in the nose. Some conceivable powdered sugar character with soft, rich oak and vanilla notes. Lower acidity.
Big, round, soft and juicy with tons of soft, rich oak contributing the most vanilla-like character I've ever seen without actual vanilla being used. Some citrus acidity and mild, fruity Brett with light lacto in the background. Good structure, funk, balance and drink ability. Weird nose, but that happens with old spontaneous beers.

750ml bottle murky orange, white head. Nice tart, stone fruits, some champagne vinegar. Flsvor has sweet tarts and stone fruits and sparkling vinegar notes. Full, dry, tart finish. 8 8 8.5 8 8

0,75l bottle shared at home. Bottles 03/2024. Dark red color, small purple head. smells berry notes, raspberries, blackberries, jammy. Lovely smell. full body soft carbonation. tastes berry notes, tannins, jammy, raspberries, blackberries, general berries, citric, tart. finishes light to medium dry and light to medium sour with notes of raspberries, blackberries and some light citrus notes. lovely beer, gin not noticeable, but lots and lots of juice beer notes. great!

0,75l bottle shared at home. yellow cloudy color, medium big white head. smells stone fruits, nectarines, peaches, jammy, light marzipan. Very nice smell. full body , pearly carbonation. tastes stone fruits, nectarines, jammy, peaches, citric, grassy. finishes dry and light to medium sour with notes of citric, peaches and nectarines. Very nice one, carbonation is a tad too strong, but overall this is lovely

On tap at Ridgewood, pours a hazy golden orange with a small white head. Aroma has big time phenols… fuck sake… with some oak, wild bugs, but this is all ruined by the phenols. Flavour is a phenol-bomb, with plenty of oak in there, but it can’t save the phenolic notes. All sorts of wrong. Bad.

Hazy, pale, thin head. Big peach aroma, good sort of tannic note. The palate is light and soft. Bright peach, that subtle vinous complexity. It's dry, with a slightly higher effervescence that has it coming across light, bright, slightly tart, and just very well balanced.

750mL bottle, pours a hazy pale golden blonde with a medium white head. Aroma is full of big juicy peaches, some gentle wine barrels, and plenty of wild bugs. Flavour is super juicy, with tons of juicy peaches, plenty of oak, and some great wild yeast complexity. Super juicy, buggy, and oaky. This is fantastic.

Poured from 750mL bottle. Hazy yellow with small white head with tiny bit of sediment. Soft peach, semi-dry, feint barrel background that adds a nice complexity. Comes together nicely.

Hazy and dirty blonde colour. Medium head. It's got some brett c, brett lambicus, pedio. On the body, fluffy, mellow brett, a touch lemony, again maybe pedio but it's quite light. Light acidity. Good stuff, light and bright.
